Ingredients (9 ingredients)

  • 2 cups water
  • 7 ounce box Spanish yellow rice mix
  • 3 tablespoons olive oil
  • 0.5 cup diced onion
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 piece green bell pepper, diced
  • 1 piece red bell pepper, diced
  • 1 tablespoon sweet and spicy seafood seasoning
  • 0.5 cup fresh parsley, or to taste

Cook the Rice

Pour 2 cups of water into the Thermomix bowl. Add the rice mix from the 7-ounce box and 1 tablespoon of olive oil. Cook for 1 minute at 100°C on speed 1. Then, cover the mixing bowl and let it simmer until the water is absorbed, approximately 25 minutes, without any heat or stirring.

Sauté Onion

Add ½ cup of diced onion and 2 tablespoons of olive oil to the Thermomix bowl. Sauté for 3 minutes at 120°C on speed 1 until the onion is just soft.

Cook Shrimp and Peppers

5 min/212°F/Speed 1 100

Add 1 pound of uncooked medium shrimp (peeled and deveined), 1 diced green bell pepper, 1 diced red bell pepper, and 1 tablespoon of sweet and spicy seafood seasoning to the Thermomix bowl. Cook for 5 minutes at 100°C on speed 1, stirring occasionally with the spatula, until the shrimp are bright pink.

Mound the rice on each plate. Top with a portion of the pepper-shrimp mixture and a generous sprinkling of ½ cup of fresh parsley, or to taste. No Thermomix settings are needed for this step.
