Description

This arugula salad is an explosion of Mediterranean flavors. Fresh arugula is combined with the intensity of sun-dried tomatoes and the salty touch of Parmesan cheese. The vinaigrette, made with the oil from the sun-dried tomatoes and Sherry vinegar, gives it a unique and delicious flavor. It is a perfect option as a light starter or side dish for any meal. Ingredients (5 ingredients)

  • 200 g Arugula
  • Parmesan cheese
  • 10 piece Sun-dried tomato
  • Sherry vinegar
  • to taste Salt

Preparation (4 steps)

Prepare the sun-dried tomatoes

Cut the sun-dried tomatoes into small pieces of approximately 1x1 cm. Reserve.

Make the vinaigrette

Thermomix® Setting
10 sec/Speed 4

In the Thermomix bowl, place the oil from the sun-dried tomatoes preserve, the Sherry vinegar and the pieces of sun-dried tomato. Mix 10 sec./Stufe 4.

Mix the salad

In a large bowl, place the arugula and pour the sun-dried tomato vinaigrette. Add a pinch of salt and mix gently with the spatula to ensure that all the ingredients are well integrated.

Plate and serve

Serve the salad on individual plates. Grate fresh Parmesan cheese over each plate with a fine grater or microplane just before serving.
