  • 50 g Grated Parmigiano Reggiano
  • 1 pinch Fine salt
  • 2 tbsp Extra virgin olive oil
  • 1 pinch Black pepper

Eggs and salt in the bowl

Cooking in a pan

Pour the extra virgin olive oil into a non-stick pan and heat over low heat. Pour the egg and cheese mixture into the hot pan. Cook over low heat for about 7 minutes, covering with a lid.

Turn the omelet

With a spatula, check that the omelet is cooked on the bottom. Gently detach the edges. Remove the pan from the heat and, with the help of a lid or a plate, gently turn the omelet and put it back in the pan.

Complete cooking

Cook the omelet over low heat on the other side for about 6 minutes, until golden brown. Serve the hot omelet directly from the pan.
