Description

I love this fresh pasta recipe, perfect for a quick lunch or a light dinner in the summer. The sauce is incredibly simple: ripe tomatoes, fresh garlic, aromatic herbs, and quality olive oil. The secret lies in the freshness of the ingredients and the speed of preparation. In a few minutes, you have a tasty and fragrant dish that smells like sunshine. Feel free to add Parmesan shavings for even more deliciousness. It's a vegetarian dish that will please the whole family, and it's ready in a flash!

Ingredients (6 ingredients)

  • to taste herbs (basil, parsley, chervil...)
  • pasta (penne type)
  • to taste quality olive oil
  • to taste coarse unrefined salt
  • 6 clove fresh garlic
  • 500 g ripe beef heart tomato

Preparation (7 steps)

Preparation of the tomato sauce

Cut the beef heart tomato into dice and set aside. Peel the garlic cloves.

Chop the garlic and coarse salt

Put the garlic cloves and a pinch of coarse unrefined salt into the Thermomix bowl and chop 3 Sec./Level 7.

Mix the garlic, salt and olive oil

Add the diced tomato and cover with quality olive oil. Mix gently with the spatula.

Chop the herbs

Roughly chop the basil, parsley and chervil (or the herbs of your choice) in the Thermomix bowl for 3 Sec./Level 5.

Cooking the pasta

Meanwhile, cook the pasta (penne type) in a large amount of boiling salted water. Follow the instructions on the package for al dente cooking.

Mix the sauce and pasta

Drain the pasta and add it immediately to the Thermomix bowl with the tomato sauce, garlic, olive oil and chopped herbs. Mix gently by hand to coat the pasta well.

Serve

Serve the pasta immediately, possibly with Parmesan shavings.
