Description

This beef dish with okra is a feast for the senses! Inspired by Moroccan cuisine, it combines tender beef with the slightly sour note of okra pods and a wealth of oriental spices. Ras el Hanout, Harissa, cumin and cinnamon take you on a culinary journey. I particularly like to cook this dish in autumn, when the aromas of cinnamon and cloves are particularly well suited to the season. It is a hearty and warming dish that can be enjoyed with rice or flatbread. The preparation takes a little time, but the effort is definitely worth it!

Ingredients (18 ingredients)

  • 700 g Beef from the topside
  • 2 piece Onions
  • 4 clove Garlic
  • 3 tbsp Oil
  • 4 piece Tomatoes
  • 1 tbsp Tomato paste
  • 2 tsp Spice mixture Ras el Hanout
  • 1 tsp Harissa
  • 1 tsp Sweet paprika powder
  • 0.5 tsp Ground cumin
  • 0.5 tsp Cinnamon
  • 2 piece Cloves
  • 1 piece Bay leaf
  • 0.5 pinch Salt and Pepper
  • 350 ml Beef broth or vegetable broth
  • 400 g Okra pods fresh, or alternatively from the can / jar (drained weight 345 g AG)
  • 0.5 bunch Coriander or flat-leaf parsley
  • 1 piece Lemon quartered, to serve with the food

Preparation (10 steps)

Chop onions and garlic

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Put 2 peeled onions into the mixing bowl and chop for 3 sec./speed 5. Add 4 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté onions and garlic

Thermomix® Setting

Add 3 tbsp oil to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare tomatoes

Scald 4 tomatoes, quench, peel, remove seeds and dice the pulp. Set aside.

Sear meat (NOT in the Thermomix!)

Cut 700 g of beef from the topside into approx. three cm cubes. Sear the meat in portions in a pan with oil and set aside.

Sauté spices

Add the fried meat to the onions and garlic in the mixing bowl. Add 1 tbsp tomato paste, 2 tsp spice mixture Ras el Hanout, 1 tsp Harissa, 1 tsp sweet paprika powder, 0.5 tsp ground cumin, 0.5 tsp cinnamon, 2 cloves and 1 bay leaf and sauté for 2 min./120°C/speed 1. Be careful not to burn anything!

Stew ragout

Thermomix® Setting
120 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the diced tomatoes, 0.5 tsp salt and pepper and 350 ml beef or vegetable broth to the mixing bowl. Cook for 120 min./100°C/speed 1/reverse.

Prepare okra pods (if fresh)

If using fresh okra pods: Rinse 400 g okra pods, drain, shorten stems. Blanch in boiling salted water for two minutes, place in a sieve, quench in cold water and drain.

Add okra pods

15 min/212°F/Speed 1/Linkslauf 100 Reverse

15 minutes before the end of the cooking time (after 105 minutes), add the fresh, blanched okra pods or the drained okra pods from the can/jar (drained weight 345 g AG) to the mixing bowl and cook for 15 min./100°C/speed 1/reverse.

Chop coriander/parsley

Thermomix® Setting
3 sec/Speed 5

Briefly rinse 0.5 bunch of coriander or flat-leaf parsley, shake dry and place in the mixing bowl. Chop for 3 sec./speed 5.

Season and serve

Season the ragout to taste and refine with lemon juice if necessary. Sprinkle with the chopped coriander or parsley and serve with lemon wedges.
