Description

This saddle of venison on wild herb salad is a poem! I especially like to make it in the summer when the wild herbs are fresh. The tender saddle of venison harmonizes wonderfully with the slightly bitter rocket, the sweet blueberries and the spicy dressing. The fried onion rings give the salad an extra crunch. A great dish for a festive meal or just when you want to enjoy something special. The preparation is a bit more complex, but it's worth it!

Ingredients (14 ingredients)

  • 400 Gramm Saddle of venison
  • 200 Gramm fresh rocket
  • 1 container Chanterelles
  • 1 container Blueberries
  • 2 x Mozarella
  • 1 container Cherry tomatoes
  • 1 Bündel Wild herbs , e.g. sorrel, dill, ground elder
  • 4 x Eggs
  • 1 Schluck Olive oil
  • 1 Teelöffel medium-hot Mustard
  • 1 Teelöffel liquid Honey
  • 1 Schuss fruity Vinegar
  • 1 x Salt and pepper
  • 1 x Vegetable onion , large

Preparation (5 steps)

Prepare salad

Wash and drain the rocket, cherry tomatoes and blueberries. Clean the chanterelles and halve if necessary.

Prepare saddle of venison

Trim the saddle of venison, salt it and let it rest for about 15 minutes.

Cook eggs

Put 4 eggs in the simmering basket. Fill 500 ml water into the mixing bowl, insert the simmering basket and cook for 6 Min./100°C/level 1. Then quench the eggs and let them cool down.

Prepare dressing

Add 1 dash olive oil, 1 teaspoon medium-hot mustard, 1 teaspoon liquid honey, 1 dash fruity vinegar, 1 pinch salt and pepper to the mixing bowl and mix for 20 sec./level 3.

Cut the vegetable onion into rings, salt and flour.
