Description

Juicy rolls with apples and yogurt, perfect for breakfast or brunch.

Ingredients (9 ingredients)

  • 1 Stück Apple
  • 50 g Durum wheat semolina
  • 550 g Wheat flour type 550 or spelt flour 630
  • 1 TL Sugar
  • 125 g Natural yogurt
  • 15 g Fresh yeast
  • 1.5 TL Salt
  • 10 g Oil neutral
  • 0.5 TL Cardamom to taste

Preparation (10 steps)

Chop apple

Quarter and core 1 apple. Place in the mixing bowl and chop for 3-5 seconds/speed 7. Push the pieces down with the spatula and chop again for 5 seconds/speed 3.

Stir liquid ingredients

Add 125-150 g water, 125 g natural yogurt, 1 teaspoon sugar and 15 g fresh yeast and stir for 3 min./37°C/speed 2.

Knead dough

Add 50 g durum wheat semolina, 550 g wheat flour type 550 or spelt flour 630, 1.5 teaspoons salt and 10 g oil neutral (and 0.5 teaspoons cardamom, if desired) and knead the ingredients for 5 min./kneading setting until a smooth dough forms.

Let dough rest

Place the dough in an oiled bowl and refrigerate overnight. The dough can sleep a little here.

Prepare oven

The next morning, first place a baking sheet in the cold oven and turn the oven to 240 degrees Celsius top/bottom heat. We place the largest possible shallow dish (casserole dish or baking sheet) with water on the bottom of the oven.

Shape dough

Place the dough on a well-floured work surface, sprinkle some flour on top and pull the dough into a rectangle by carefully grabbing it from below and pulling it into shape. This works much better than flattening it. Now we take a dough scraper and cut the dough into twelve roughly even pieces by quickly pressing the dough scraper into the dough. Don't saw!

Prepare dough pieces

Now place the dough pieces upside down on the baking paper and press them together a little bit. If you like, you can now cut the dough pieces diagonally about 2 mm deep, but it is not necessary. Of course, we can also fold each dough piece several times and then round it off, placing it upside down on the baking paper. Then they look like the rolls in the middle row.

Bake rolls

When the oven is well preheated, take the hot tray out of the oven, quickly but without haste pull the baking paper with the rolls onto the baking tray. This gives a good oven drive from the beginning. Bake for 10 min at 240 degrees, remove the lower vessel from the oven and bake for another 10-15 min. at 210 degrees.
