Description

This apple cake with hazelnut is a poem! I especially like to bake it in autumn when the apples come fresh from the tree. The grated apples and the glaze make it wonderfully juicy, and the hazelnuts give it a fine, nutty note. The cake is perfect for Sunday coffee or as a dessert for a festive meal. It can also be prepared well and stays fresh for a few days. An absolute must for all apple cake lovers! If you like, you can add raisins or almonds to the dough.

Ingredients (13 ingredients)

  • 150 g Butter or margarine
  • 125 g Sugar
  • 3 piece Egg(s)
  • 125 g Hazelnuts, ground
  • 50 g Flour
  • 2 tsp Baking powder
  • 1 tsp Cinnamon
  • 800 g Apples (e.g. Elstar), coarsely grated
  • 0.5 cup Sugar
  • 2 piece Egg(s)
  • 1 piece Lemon(s), juice of
  • 2 tbsp Vanilla pudding powder
  • 2 container sweet Cream each 200 g

Preparation (6 steps)

Prepare batter

Thermomix® Setting
3 min/Speed 4

Put 150 g butter or margarine, 125 g sugar and 3 eggs into the mixing bowl and mix for 3 min/speed 4. Add 125 g ground hazelnuts, 50 g flour, 2 tsp baking powder and 1 tsp cinnamon and mix for another 30 sec/speed 4. Fill the dough into a prepared springform pan.

Bake cake

Pour the batter into a springform pan and bake in a preheated oven at 160 °C circulating air for approx. 30 minutes. Let the cake cool down.

Prepare apple mixture

Thermomix® Setting
8 min/212°F/Speed 2 100

Put 800 g coarsely grated apples, 0.5 cup sugar, 2 eggs, the juice of one lemon and 2 tbsp vanilla pudding powder into the mixing bowl and bring to the boil for 8 min./100°C/speed 2, stirring constantly. Let the apple mixture cool down a little.

Spread apple mixture

Spread the slightly cooled apple mixture on the baked cake base and refrigerate the cake.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Put 2 cups of sweet cream each 200 g into the mixing bowl and whip with the butterfly for 2 min./speed 3.5 until stiff. Keep an eye on the cream so that it does not turn into butter.

Spread and decorate cream

Spread the whipped cream on the cake and smooth it out. Sprinkle with some cocoa powder as desired.
