Description

This sautéed collard greens with seafood is a traditional Asturian recipe that I have adapted to prepare with the Thermomix®. The combination of collard greens, a type of cabbage very popular in the north of Spain, with king prawns and clams, results in a tasty and comforting dish, perfect for cold days. The key is to cook the collard greens well so that they are tender and sauté the seafood just at its point so that they do not dry out. A few slices of lemon give it a fresh and citrusy touch that enhances the flavors of the sea. I hope you like it as much as I do!

Ingredients (8 ingredients)

  • 1 piece collard greens
  • 1 pocillo olive oil
  • king prawns
  • clams
  • 2 clove garlic
  • salt
  • 1 piece chilli pepper
  • 1 piece lemon

Preparation (5 steps)

Chop and Cook the Collard Greens

Thermomix® Setting
20 min/212°F/Giro a la izquierda/Velocidad cuchara 212°F Reverse

Wash the collard greens well and chop them finely. Place the chopped collard greens in the Thermomix bowl. Add water to cover the collard greens and a pinch of salt. Program 20 Min./100°C/Turn to the left/Spoon speed. Drain the collard greens well after cooking.

Chop the Garlic and Chilli Pepper

Peel the garlic cloves and place them in the Thermomix bowl along with the chilli pepper. Program 3 Seg./Speed 7 to chop finely.

Fry Garlic and Chilli Pepper

Thermomix® Setting
3 min/248°F/Velocidad 1 248°F

Add the olive oil to the Thermomix bowl. Program 3 Min./120°C/Speed 1. Remove the garlic and chilli pepper from the bowl and set aside.

Sauté the King Prawns and Clams

Thermomix® Setting
2 min/Varoma/Giro a la izquierda/Velocidad cuchara Varoma Reverse

Add the peeled king prawns to the Thermomix bowl with the same oil. Program 3 Min./Varoma/Turn to the left/Spoon speed. Add the clams and program 2 Min./Varoma/Turn to the left/Spoon speed, or until they open.

Incorporate Garlic, Collard Greens and Serve

2 min/212°F/Giro a la izquierda/Velocidad cuchara 212°F Reverse

Add the reserved garlic and chilli pepper to the Thermomix bowl. Incorporate the well-drained collard greens. Program 2 Min./100°C/Turn to the left/Spoon speed to sauté. Serve hot with a few slices of lemon.
