Description

These savory puff pastry sticks are an absolute hit at any party or cozy brunch! I always like to make them because they are so easy and quick to prepare. The puff pastry is topped with a creamy sour cream filling, spicy smoked ham and cheese and then baked into crispy sticks. Instead of ham, you can also use smoked salmon, which also tastes super delicious. The sticks are a pleasure both warm and cold and can be prepared well. Perfect for those who like it hearty!

Ingredients (4 ingredients)

  • 1 Pck. Puff pastry from the refrigerated section, rectangular
  • 200 g Sour cream
  • 80 g Smoked ham diced
  • 100 g Cheese, grated

Prepare sour cream

Put 200 g sour cream into the mixing bowl and stir for 5 sec./speed 3.

Top puff pastry

Roll out the puff pastry and spread one half of the dough with a good half of the sour cream. Distribute half of the 80 g of diced ham and 50 g of the grated cheese on top. Fold the side of the puff pastry that is not topped over the other side.

Top again

Again, spread half of the dough with the remaining sour cream and add the remaining 40 g of diced ham and 50 g of grated cheese. Fold the ungreased half of the dough over it.

Form sticks

Cut the puff pastry into strips. Carefully twist into a spiral shape and place on a baking sheet lined with baking paper.

Baking

Bake in a preheated oven at 180 °C top/bottom heat for approx. 25 minutes.

These savory puff pastry sticks are a staple in our family. I still remember how my grandma always baked them for birthdays or other celebrations. The smell of freshly baked puff pastry and smoked ham then filled the whole house - simply wonderful! Over the years, I have modified her recipe a bit and adapted it to the Thermomix® to make preparation even easier. The puff pastry forms the crispy base for this treat. Make sure to use a puff pastry from the refrigerated section that is already rolled out rectangularly. This saves time and effort. The sour cream provides a creamy and slightly sour note that harmonizes perfectly with the spicy smoked ham. The smoked ham brings a hearty smoky note to the game, which is wonderfully complemented by the grated cheese. I prefer to use a mixture of Gouda and Emmental, but other cheeses such as mountain cheese or Cheddar also go perfectly. The preparation with the Thermomix® is very simple. First, the sour cream is briefly stirred in the mixing bowl to make it nice and creamy. This only takes a few seconds and saves time. When topping the puff pastry, it is important not to apply too much sour cream, as it could otherwise leak out during baking. Spread it evenly on half of the dough and make sure that the edges remain free. The same applies to ham and cheese: less is more. A thin layer is enough to optimally develop the taste. After the puff pastry has been topped and folded, it is brushed and topped again. This ensures a double layer of flavor and texture. There are numerous variations for vegetarians or vegans. Instead of smoked ham, you can use dried tomatoes, olives or roasted vegetables, for example. Feta cheese or halloumi are also a delicious alternative. For a vegan version, you can replace the sour cream with a plant-based alternative such as cashew cream or soy yogurt and use vegan cheese. You can also let your creativity run wild with the spices. Garlic powder, paprika powder, oregano or thyme go perfectly with the savory puff pastry sticks. The puff pastry sticks are a pleasure both warm and cold. They go perfectly with a glass of wine or beer and are an ideal snack for parties or a cozy evening on the couch. You can also serve them as a side dish to soups or salads. If you want to prepare the sticks, you can form them the day before and place them on a baking sheet. Before baking, you should then brush them with a little beaten egg to give them a beautiful golden brown color. The baked sticks can be stored well in an airtight container. They then remain crispy for a few days.
