About this recipe

This sautéed green beans with ham and egg is a dish that reminds me of my grandmother. She always prepared fresh green beans from her garden, although not with Thermomix, of course. Her version was more rustic, cooked in a large pot and sautéed in an iron skillet. This dish is a modern adaptation of that traditional recipe, taking advantage of the convenience and precision of the Thermomix. The green beans are the base of this dish, providing a crunchy and fresh touch. It is important not to overcook them so that they maintain their al dente texture. The cured ham, with its salty and intense flavor, contrasts wonderfully with the smoothness of the beans. I use good quality cured ham, cut into small cubes, so that it is evenly distributed throughout the dish. The garlic, finely chopped and browned in olive oil, adds a delicious aroma and a subtle spicy touch. And, finally, the boiled egg, crumbled or cut into cubes, provides creaminess and an extra protein. For preparation in Thermomix, it is crucial to respect the cooking times of the green beans. If you cook them too much, they will be soft and lose their charm. The basket is essential to prevent the beans from falling apart during cooking. When sautéing the garlic, watch the temperature so that it does not burn, as this would ruin the flavor of the dish. If you do not have a Thermomix, you can steam the beans or in boiling water and sauté them in a pan. This sauté is very versatile. For a vegetarian version, you can substitute the ham for sautéed mushrooms or smoked tofu. If you prefer a more exotic touch, you can add a few drops of soy sauce or a little grated ginger. You can also experiment with different spices, such as sweet paprika or cumin. Serve this sauté as a light main dish, as a side dish to grilled meat or fish, or as part of a more complete salad. Some whole wheat toast or a little white rice are excellent accompaniments. If you have any leftover sauté, you can store it in an airtight container in the refrigerator for a maximum of two days. Keep in mind that the green beans may lose some of their crunchy texture when reheated. You can also prepare the green beans and boiled egg in advance and sauté them just before serving.
