Description

These savory zucchini fritters are an absolute must for every vegetable fan! I especially like to make them in the summer when the zucchini are just sprouting in the garden. The fritters are super juicy and get a great seasoning from the cheese. They are perfect as a small snack in between, as a side dish for grilling or as a light main course with a fresh salad. The preparation is very simple and quick - ideal if you need to be quick. If you like, you can add fresh herbs such as parsley or chives to the dough. A real all-rounder that is always well received!

Ingredients (10 ingredients)

  • 1000 g Zucchini
  • 1 piece Onion
  • 1 clove Garlic
  • 150 g Flour
  • 2 tbsp Breadcrumbs
  • 3 piece Eggs
  • 100 g Grated cheese
  • 1 tsp Salt
  • to taste Pepper
  • Oil for frying

Preparation (4 steps)

Prepare zucchini

Grate 1 kg zucchini coarsely. Place the grated zucchini in a clean tea towel and squeeze out the liquid well. This is important so that the fritters do not become too soft later.

Chop onion and garlic

Put 1 onion and 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Prepare dough

Add the squeezed zucchini, the chopped onion and garlic together with 150 g flour, 2 tbsp breadcrumbs, 3 eggs, 100 g grated cheese, 1-2 tsp salt and pepper to the mixing bowl. Mix everything for 20 sec./speed 4.

Fry fritters

Heat oil in a pan. Add the dough to the hot pan in portions with a tablespoon and fry over medium heat until golden brown on both sides. This takes about 5 minutes per side.
