Description

This sheet cake with almond crust, prepared in the Thermomix®, is a simple cake for festive occasions or an autumn coffee table. The main ingredients are eggs, flour, cream, sugar, and almond flakes. The preparation time is a total of 35 minutes, of which 20 minutes are working time, and yields approximately 20 servings. Ideal for families and anyone who loves uncomplicated cake recipes.

  • 4 Stück Eggs, size M
  • 300 g Flour
  • 250 ml Cream
  • 200 g Sugar, fine
  • 1 Päckchen Baking powder
  • 1 Päckchen Bourbon vanilla sugar
  • 200 g Almond flakes
  • 200 g Sugar
  • 150 g Butter
  • 50 ml Cream

Preparation (9 steps)

Preheat oven and prepare baking sheet

Preheat the oven to 200°C (390°F) top/bottom heat. Grease a deep baking sheet (approx. 46 × 37 cm outer dimensions or approx. 39 × 30 cm inner dimensions) well and sprinkle with breadcrumbs.

Mix cream, sugar, vanilla sugar and eggs

Add 250 ml cream, 200 g sugar and 1 packet of bourbon vanilla sugar and 4 eggs to the mixing bowl and mix for 20 sec/speed 4.

Mix flour and baking powder and stir in

Thermomix® Setting
30 sec/Speed 3

Add 300 g flour and 1 packet of baking powder to the mixing bowl and stir in for 30 sec/speed 3. Be careful not to stir for too long.

Spread batter on the baking sheet

Spread the batter on the prepared baking sheet.

Pre-bake the base

Bake the batter in the preheated oven on the middle rack for about 10-12 minutes until lightly browned.

Melt cream and butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Add 50 ml cream and 150 g butter to the mixing bowl and melt for 3 min/50°C/speed 2.

Stir in almond flakes and sugar

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add 200 g almond flakes and 200 g sugar to the mixing bowl and stir in for 10 sec/Reverse speed/speed 2.

Spread topping on the pre-baked base

Spread the almond mixture spoonful by spoonful on the pre-baked base.

Finish baking the cake

Bake the cake again on the middle rack for about 10 minutes until done.
