Dieses cremige rote Curry mit Garnelen ist ein absolutes Highlight! Ich mache es total gerne, weil es so schnell geht und trotzdem unglaublich lecker schmeckt. Die Kombination aus Kokosmilch, roter Currypaste und frischen Garnelen ist einfach unschlagbar. Ein Hauch von Thai-Basilikum und Limette rundet das Gericht perfekt ab. Ideal für ein schnelles Abendessen unter der Woche oder auch für Gäste. Wer es nicht so scharf mag, kann natürlich weniger Jalapeno verwenden. Das Gericht lässt sich auch super vorbereiten und schmeckt aufgewärmt fast noch besser!

Ingredients (13 ingredients)

  • 1 tbsp vegetable oil
  • 1 piece medium white onion, diced
  • 1 piece medium red bell pepper, cut into thin strips
  • 0.5 piece medium jalapeno pepper, minced
  • 14 ounce can unsweetened coconut milk
  • 3 tbsp red curry paste
  • 2 tbsp brown sugar
  • 1.5 tbsp fish sauce
  • 1.5 tbsp cornstarch
  • 1.5 tbsp cold water
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 tbsp chopped Thai basil
  • 1 piece medium lime, cut into wedges

Preparation (6 steps)

Sautéing the Aromatics

5 min/248°F/Speed 1 120

Add 1 tablespoon of vegetable oil, 1 diced medium white onion, 1 medium red bell pepper cut into thin strips, and ½ medium minced jalapeno pepper to the mixing bowl. Cook for 5 Min./120°C/Speed 1.

Transfer Vegetables

Remove the sautéed vegetables from the mixing bowl and set aside in a bowl.

Making the Curry Sauce

8 min/212°F/Speed 2 100

Add 1 (14 ounce) can of unsweetened coconut milk, 3 tablespoons of red curry paste, 2 tablespoons of brown sugar, and 1 ½ tablespoons of fish sauce to the mixing bowl. Cook for 8 Min./100°C/Speed 2.

Thickening the Sauce

3 min/194°F/Speed 2 90

Combine 1 ½ tablespoons of cornstarch and 1 ½ tablespoons of cold water in a small bowl and whisk to dissolve. Add the cornstarch mixture to the mixing bowl and cook for 3 Min./90°C/Speed 2.

Adding Shrimp and Vegetables

5 min/194°F/Speed 1/Linkslauf 90 Reverse

Add 1 pound of uncooked medium shrimp, peeled and deveined, and the cooked vegetables to the mixing bowl. Cook for 5 Min./90°C/Speed 1/Linkslauf.

Stir in 2 tablespoons of chopped Thai basil. Serve hot with lime wedges.
