Description

This dish is a real treat and super quick to prepare! The combination of juicy shrimp, fresh peas and creamy rice is simply unbeatable. I especially like to make it when things need to be quick, but I still want something special on the table. The light garlic note harmonizes perfectly with the sweet peas and rice. A dash of lemon juice provides the necessary freshness. Perfect for a light lunch or dinner!

Ingredients (12 ingredients)

  • 200 g Long grain rice
  • to taste Salt
  • 250 g Frozen peas
  • 250 g Ready-to-cook shrimp
  • 1 piece Onion
  • 2 clove Garlic
  • 2 tbsp Butter
  • 100 ml Vegetable broth
  • 150 g Whipping cream
  • 1 tbsp Light gravy thickener
  • 1 tbsp Lemon juice
  • to taste Pepper

Preparation (7 steps)

Cook rice and peas

Thermomix® Setting
25 min/212°F/Speed 1 100

Add 200 g long-grain rice, a little salt and 500 ml water to the mixing bowl and cook for 25 min./100°C/speed 1 with simmering basket. Add 250 g frozen peas to the simmering basket 5 minutes before the end of the cooking time.

Prepare shrimp

Rinse 250 g ready-to-cook shrimp and pat dry.

Chop onion and garlic

Peel, quarter and add 1 onion to the mixing bowl. Chop 3 sec./speed 5. Add 2 cloves of garlic and chop 3 sec./speed 7.

Sauté onion and garlic

Add 2 tbsp butter and sauté 3 min./120°C/speed 1.

Prepare sauce

Add 100 ml vegetable broth and 150 g whipping cream and bring to the boil for 5 min./100°C/speed 2.

This dish has been a real hit at our house since I got the Thermomix®. I still remember how I used to spend hours in the kitchen preparing a similar dish with risotto rice. The Thermomix® has simplified and accelerated the whole thing so much that it is now a fixed part of our weekly plan. The idea for the combination of shrimp and pea rice came to me during a visit to a small fish restaurant on the Baltic Sea. They had a similar dish that immediately inspired me. The list of ingredients may seem simple at first glance, but each component plays an important role. The long-grain rice forms the basis and provides a pleasant texture. Make sure to use high-quality rice, as it affects the taste of the entire dish. The frozen peas bring a sweet note and a beautiful green color into play. I always use frozen peas, as they retain their taste and consistency better than fresh peas out of season. The shrimp are, of course, the star of the dish. I recommend using ready-to-cook shrimp to save time. But make sure they are of good quality and don't taste too watery. Onion and garlic form the aromatic base of the sauce. The butter provides a creamy texture and a rich flavor. The vegetable broth and whipping cream form the base of the sauce. The light gravy thickener helps to thicken the sauce without affecting the taste. And finally, the lemon juice provides a refreshing acidity that perfectly rounds off the dish. When cooking with the Thermomix®, it is important to follow the instructions exactly. Be careful not to cook the rice and peas for too long, as they will become mushy. The cooking time may vary depending on the type of rice. The shrimp should only be heated briefly in the sauce, as they will otherwise become tough. It is important to use the reverse rotation so that the shrimp are not crushed. When seasoning the sauce, you can let your creativity run wild. I sometimes add some fresh dill or parsley. There are many ways to vary this dish. For a vegetarian version, you can replace the shrimp with tofu or Halloumi. For a vegan version, you can replace the whipping cream with vegetable cream and the butter with olive oil. You can also use other spices, such as curry powder, paprika powder or chili. I like to serve the dish with a fresh salad or a piece of baguette. It is also excellent as a side dish to grilled fish or meat. Leftovers can be stored in the refrigerator and reheated the next day. The dish can also be prepared well in advance. You can cook the rice and peas in advance and prepare the sauce. Just before serving, all you have to do is add the shrimp and heat everything up.
