Description

This autumnal pumpkin cream soup from the Thermomix® is a vegetarian dish with pumpkin flesh, carrots, potatoes and onions as main ingredients. Preparation takes about 60 minutes and yields 6 servings. Ideal as a warming appetizer or light main course for the whole family. Thanks to the easy preparation in the Thermomix®, the soup is guaranteed to succeed.

  • 2000 g Pumpkin flesh
  • 500 g Carrot(s)
  • 1000 g Potato(es)
  • 2 Stück Onion(s)
  • 2 EL Butter
  • 2 Liter Vegetable broth instant
  • 0.5 Becher Milk
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • Pumpkin seeds

Preparation (8 steps)

Prepare vegetables

Cut 2 kg of pumpkin flesh into wedges, peel and deseed. Then dice into small pieces. Peel, wash and also cut 500 g of carrots, 1 kg of potatoes and 2 onions into small pieces.

Chop onions

Put 2 onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, scrape down the sides with the spatula.

Sauté onions

Add 2 tbsp butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add broth and bring to a boil

Add 2 liters of instant vegetable broth to the mixing bowl and bring to a boil for 5 min./100°C/speed 1.

Add vegetables and cook

25 min/212°F/Speed 1 100

Add pumpkin pieces, carrot pieces and potato pieces to the mixing bowl. Season with salt and pepper and cook for 25 min./100°C/speed 1.

Puree soup

30 sec/Speed 8-10

Puree the soup for 30 sec./speed 8-10, slowly increasing the speed. If necessary, puree for longer until the desired consistency is reached.

Add milk and season

Add 0.5 cup of milk and stir in for 2 min./80°C/speed 1. Season with salt and pepper.

Serve the pumpkin soup hot. Sprinkle with pumpkin seeds as desired.
