Description

This creamy red lentil soup is an absolute comfort food! I especially like to make it when it's cold outside. The preparation is super easy and quick, perfect for after work. The red lentils make the soup nice and creamy and the yogurt provides a pleasant freshness. With a dash of lemon juice and some pepper, it gets the finishing touch. If you like it a little spicier, you can add a pinch of chili. A great vegetarian dish that is also really filling!

Ingredients (9 ingredients)

  • 2 piece Carrot(s)
  • 2 piece Onion(s), small
  • 200 g Lentils, red
  • 2 tbsp Ghee or clarified butter
  • 200 g Yogurt
  • Lemon juice
  • Salt
  • Pepper
  • 1 l Vegetable broth

Preparation (5 steps)

Prepare carrots and onions

Clean 2 medium-sized carrots and 2 small onions and cut into coarse pieces. Place in the mixing bowl and chop for 5 sec./speed 5.

Sauté vegetables

Add 2 tbsp ghee or clarified butter and sauté for 3 min./120°C/speed 1.

Add lentils and broth

Thermomix® Setting
15 min/212°F/Speed 1 100

Add 200 g red lentils and 1 liter vegetable broth and simmer for 15 min./100°C/speed 1.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Puree the soup for 30 sec./speed 8-10, slowly increasing the speed.

Refine soup

Thermomix® Setting
2 min/140°F/Speed 1 60

Stir in 200 g yogurt and season with lemon juice, salt and pepper. If necessary, heat again for 2 min./60°C/speed 1.
