  • 1 tablespoon salted butter
  • 2 teaspoon extra-virgin olive oil
  • 0.5 cup frozen diced carrots
  • 0.25 cup minced shallot
  • 1 tablespoon minced garlic
  • 3 ounces prosciutto, chopped
  • 2.5 cups chicken broth
  • 14.3 ounce cannellini beans, drained and rinsed
  • 0.5 cup ditalini pasta
  • 0.5 sprig fresh rosemary
  • 1 piece California bay leaf
  • 2 sprigs thyme
  • 1 teaspoon granulated garlic
  • 0.125 teaspoon truffle salt
  • 1 piece cheesecloth
  • 1 piece butcher's twine

Sauté vegetables and prosciutto

Add butter and olive oil to the mixing bowl. Set the Thermomix to 5 Min./120°C/Stufe 1. Add diced carrots and minced shallot and garlic to the mixing bowl and sauté. After 5 minutes, add chopped prosciutto and sauté for an additional 3 Min./120°C/Stufe 1.

Add broth, beans, and pasta

Add chicken broth, drained and rinsed cannellini beans, and ditalini pasta to the mixing bowl. Stir to combine. 1 Min./Stufe 1/Linkslauf

Prepare bouquet garni

Place fresh rosemary, bay leaf, and thyme onto a piece of cheesecloth. Secure cheesecloth with butcher's twine to create a bouquet garni. Add the bouquet garni to the mixing bowl.

Cook the soup for 7 Min./100°C/Stufe 1. Ensure the mixing bowl lid is securely in place.

Season the soup with garlic granules and truffle salt. Remove the bouquet garni prior to serving. Stir gently for 30 Sek./Stufe 1/Linkslauf to incorporate the seasonings.
