Description

These spaghetti with homemade sofrito are a simple dish but full of flavor, perfect for a quick weekday meal. The key is in the sofrito, where fresh tomato combines with spring onion and garlic to create a delicious and comforting sauce. I always add a pinch of pepper to give it a special touch. Add a little extra virgin olive oil to the glass. Program 8 minutes, temperature 120°C and speed 1. Then, add salt, pepper to taste and half a crumbled chicken stock cube. Program 10 minutes, temperature 120°C and speed 1.

Cooking the pasta

While the sofrito is being made, put 1200 grams of spaghetti to cook in a pot with boiling water and salt, following the package instructions.

Mix the pasta with the sofrito

Once the spaghetti are al dente, drain the water and add the spaghetti to the glass with the sofrito. Mix by programming 2 minutes, temperature 90°C and speed 1, with left turn to avoid breaking the pasta.

She always prepared a delicious sofrito, with tomatoes from her garden, which she then used to accompany the pasta. Although she did it by hand, with the Thermomix® we can achieve a similar result, and much faster! The key to this dish lies in the quality of the ingredients. The tomatoes should be ripe and juicy, preferably of the pear or branch variety, which have more flavor. The spring onion provides a sweet and soft touch, while the garlic gives it a point of intensity. The chicken stock cube, although optional, enhances the flavor of the tomato and gives it an umami touch. As for the pasta, spaghetti are ideal for this type of sauce, as they are well impregnated with the sofrito. To prepare the sofrito in the Thermomix®, it is important to follow the steps carefully. First, we chop the spring onion and garlic finely so that they integrate well into the sauce. Then, we grate the tomatoes to obtain a smooth and homogeneous texture. Next, we sauté the spring onion and garlic in extra virgin olive oil until golden brown. Add the grated tomato, salt, pepper to taste and half a crumbled chicken stock cube, and cook over low heat until the tomato has concentrated and the sauce has thickened. It is important not to raise the temperature too much so that the tomato does not burn and become bitter. If you want to give the dish a different touch, you can add other vegetables to the sofrito, such as green or red pepper, or even eggplant. For a vegetarian or vegan version, you can omit the chicken stock cube or replace it with a vegetable stock cube.
