Description

This Spanish pork stew is a comforting and flavorful dish, perfect for cold days. The pork, tender and juicy, is slowly cooked with carrots, onion and a touch of white wine, creating a delicious and aromatic sauce. I often prepare it in winter, because it is a dish that warms the body and soul. It is ideal to share with family or friends, and can be accompanied with white rice or potatoes. Also, it is quite easy to prepare, so there is no excuse not to try it! A traditional dish that always triumphs.

Ingredients (10 ingredients)

  • 800 gr diced pork
  • 2 piece carrots
  • 1 piece onion
  • 2 tbsp crushed tomato with garlic
  • 1 hoja bay leaf
  • 1 ramas thyme
  • 1 pinch black pepper
  • 100 ml dry white wine
  • 1 cube poultry broth
  • 1 pinch sea salt

Preparation (7 steps)

Prepare the vegetables

Peel and cut the carrots into thick slices. Peel and chop the onion. Introduce the carrots and onion into the Thermomix bowl.

Chop the vegetables

Chop the vegetables 5 Sec./Stage 5. With the spatula, lower the remains from the walls of the bowl.

Vegetable sauce

Thermomix® Setting
10 min/248°F/Speed 1 120

Add sea salt to taste. Sauté 10 Min./120°C/Stage 1.

Add the meat

Thermomix® Setting
5 min/248°F/Speed 1/Giro a la izquierda 120 Reverse

Add the diced pork to the bowl and correct the salt. Stir 5 Min./120°C/Stage 1/Reverse, until the meat changes color.

Evaporate the alcohol

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Raise the temperature to Varoma, add the dry white wine and let the alcohol evaporate 2 Min./Varoma/Stage 1.

Add the rest of the ingredients

10 Seg./Speed 3/Giro a la izquierda Reverse

Incorporate the crushed tomato with garlic, thyme, bay leaf and black peppercorns. Mix well 10 Sec./Stage 3/Reverse.

20 min/212°F/Speed 1/Giro a la izquierda 100 Reverse

Cover the meat with poultry broth. Close the Thermomix and program 20 Min./100°C/Stage 1/Reverse.
