Description
This simple spinach soup is a quick and healthy dish that is ideal as a starter or light main course. With fresh spinach, creamy cream cheese and aromatic spices, it is ready in just 30 minutes. The soup is vegetarian and can be easily adapted by adding goat cheese or minced meat, for example. Perfect for a quick meal on colder days.
Ingredients (9 ingredients)

200 g Cream cheese

1 Essl Olive oil

0.5 TL Nutmeg

500 g Water

1 Essl Vegetable stock

100 g Onions
-
450 g Spinach
-
Salt
-
Pepper
Preparation (4 steps)
Chop onions
Put 100g onions in the mixing bowl and chop for 3 sec./level 5.
Sauté onions
Add 1 tbsp olive oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/level 1.
Add spinach and remaining ingredients
Add 450g spinach, 500g water, salt, pepper, 1/2 tsp nutmeg, 200g cream cheese and 1 tbsp vegetable stock to the mixing bowl and cook for 10 min./100°C/level 1.
Puree soup
Puree the soup for 30 sec./level 8-10, slowly increasing the speed.
