Description

I love preparing this dish of tagliatelle with porcini mushrooms! It is a classic of Italian cuisine, perfect for an autumn dinner. Porcini mushrooms, with their intense and aromatic flavour, go perfectly with the creaminess of the fresh pasta. The preparation is simple and quick, also ideal for those who have little time. A touch of fresh parsley and a pinch of chilli pepper add a touch of liveliness. If you cannot find fresh porcini mushrooms, you can also use dried ones, rehydrating them before use. A dish that warms the heart and delights the palate!

Ingredients (8 ingredients)

  • 1 kg Porcini mushrooms
  • 320 g Egg tagliatelle
  • 4 tbsp Extra virgin olive oil
  • 1 clove Garlic
  • 1 bunch Parsley
  • 1 pinch Hot red chili pepper
  • 200 ml Vegetable broth
  • 1 pinch Salt

Preparation (7 steps)

Cleaning the porcini mushrooms

Clean the porcini mushrooms carefully. With a small knife, remove the earthy part from the stems. Avoid washing the mushrooms under running water; dampen a cloth or paper towel and gently rub all surfaces to remove any remaining soil.

Preparing the mushrooms

Separate the stems from the mushroom caps. Cut the stems into small pieces and the caps into thin slices. Set aside.

Flavouring the oil

Pour the extra virgin olive oil into the Thermomix bowl. Add the clove of garlic and a pinch of hot red chili pepper. Heat the oil to flavour it: 3 Min./60°C/Stufe 1.

Cooking the mushrooms

10 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the sliced porcini mushrooms to the bowl. Season with salt and pepper. Deglaze with vegetable broth. Cook for 10 Min./100°C/Stufe 1/Linkslauf.

Adding the parsley

Remove the garlic and chilli pepper from the bowl. Add the chopped parsley and mix for 5 Sek./Stufe 3/Linkslauf.

Stirring the tagliatelle

Thermomix® Setting
1 min/194°F/Speed 2/Linkslauf 90 Reverse

Boil the tagliatelle in plenty of salted water. Drain al dente and pour them into the bowl with the mushroom sauce. Stir for 1 Min./90°C/Stufe 2/Linkslauf, adding a little pasta cooking water to obtain a creamy result.
