Description

This creamy carrot spread is a real all-rounder! I love making it because it is so quick and easy to prepare. The sweetness of the carrots harmonizes wonderfully with the spicy garlic and fresh thyme. Perfect for a hearty breakfast, as a dip for vegetable sticks or as a delicious bread spread for in between meals. It is vegetarian and can be prepared very well. It keeps in the refrigerator for a few days, so you always have a tasty snack ready. Try it, you will be thrilled!

Ingredients (9 ingredients)

  • 1 piece Onion
  • 1 clove Garlic
  • 250 g Carrots
  • 1 tbsp Olive oil
  • 50 ml Vegetable stock
  • 3 Stiel Thyme
  • 1 tsp Salt
  • 70 g Tomato paste
  • 100 g Butter

Preparation (4 steps)

Chop onion and garlic

Put 1 peeled onion in the mixing bowl and chop for 3 sec./speed 5. Add 1 clove of garlic and chop for 3 sec./speed 7.

Add 1 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Chop and sauté carrots

Add 5 carrots (approx. 250 g) peeled and sliced into the mixing bowl and chop for 5 sec./speed 4. Add 50 ml vegetable stock and cook for 5 min./100°C/speed 1.

Add 3 sprigs of thyme (leaves plucked), 1 tsp salt, 70 g tomato paste and 100 g butter to the mixing bowl and puree for 30 sec./speed 8. If necessary, push down with the spatula and puree again.

About this recipe

This creamy carrot spread is more than just a recipe for me; it is a small culinary journey into my childhood. My grandma always had a similar spread, but without Thermomix®, with a lot of manual work and an old meat grinder. I took up her idea and refined it with the Thermomix® to make it even quicker and easier to prepare. The ingredients play a crucial role. The onion forms the aromatic base, while the garlic adds a pleasant spice without being too dominant. The carrots are, of course, the star of the spread. They bring a natural sweetness and a pleasant texture. The olive oil is not only used for sautéing, but also contributes to a soft, full-bodied taste. The vegetable stock provides the necessary moisture and supports the flavors of the carrots. The fresh thyme is my personal touch. Its slightly lemony note harmonizes wonderfully with the sweetness of the carrots and gives the spread a special freshness. The tomato paste provides a light acidity and a beautiful color. And the butter? Well, the butter makes the spread really creamy and irresistible. When preparing in the Thermomix®, it is important not to chop the onion and garlic too finely, otherwise they may burn. When sautéing, make sure that the temperature is not too high to avoid burning. The carrots should be cut into even slices so that they cook evenly. After cooking, it is important to puree the spread sufficiently to achieve a homogeneous consistency. If the spread is too thick, you can add some more vegetable stock. The carrot spread can be varied wonderfully. For a vegan version, you can simply replace the butter with margarine or another vegetable oil. If you like it a little spicier, you can add a pinch of chili or some smoked paprika powder. Other herbs such as rosemary or parsley also go very well. The spread is best served on fresh bread or rolls. But it is also ideal as a dip for vegetable sticks such as carrots, cucumbers or peppers. It also tastes great with crackers or Grissini. I recommend a fresh salad or some olives as a side dish. The carrot spread can be kept in the refrigerator in an airtight container for about 3-4 days. It can also be prepared well in advance, so you always have a tasty snack ready. You can even freeze it, but the consistency may change slightly after thawing. Before serving, you should briefly whip it again.
