Description

This watermelon tart is a perfect summer dessert to refresh your taste buds! I often prepare it for birthdays in the summer, and it always causes a sensation. The watermelon, full of sun, is highlighted by a light and fragrant cream with lime. The secret lies in the maceration of the watermelon with a little sugar and lime juice the day before, which intensifies its flavor. The shortcrust pastry, crispy, contrasts nicely with the sweetness of the filling. A simple and fruity delight, ideal to finish a meal in style. Feel free to add a few fresh mint leaves for an extra touch of freshness!

Ingredients (9 ingredients)

  • 130 g sugar
  • 50 g flour
  • 1 tbsp red food coloring
  • 20 cl watermelon juice
  • 4 piece eggs
  • 0.5 piece watermelon
  • 2 tbsp sugar
  • 1 piece lime juice
  • 1 piece shortcrust pastry

Preparation (7 steps)

Preparation of macerated watermelon

The day before, cut the half-watermelon into pieces. Place the pieces in a colander over a salad bowl to collect the juice. Add 2 tablespoons of sugar and the juice of one lime to the watermelon and mix gently. Leave to macerate in the refrigerator for at least 12 hours.

Preparation and pre-baking of the shortcrust pastry

The next day, if you are preparing homemade shortcrust pastry, follow your usual recipe. Roll out the dough and line it in a tart pan previously buttered and floured. Prick the bottom of the dough with a fork. Preheat the oven to 180°C (th. 6).

Blind baking of the dough

Bake the tart base blind for 15 minutes at 180°C (th. 6).

Preparation of watermelon cream

Thermomix® Setting

In the Thermomix bowl, place the eggs and sugar. Mix 30 Sek./Stufe 4 until the mixture whitens.

Adding watermelon juice and flour

Thermomix® Setting
20 sec/Speed 3

Add the watermelon juice recovered from the maceration, the flour and a few drops of red food coloring to the Thermomix bowl. Mix 20 Sek./Stufe 3 to obtain a homogeneous cream.

Baking the tart

Pour the watermelon preparation onto the pre-baked tart base. Bake the tart for 30 minutes at 180°C (th. 6). After 15 minutes of cooking, cover the tart with aluminum foil to prevent it from burning.

Cooling and tasting

Let the tart cool completely before serving. Serve chilled.
