Description

This protein-rich scrambled eggs with vegetables is a quick and easy main course or breakfast, prepared in the Thermomix®. The main ingredients are eggs, bell peppers, spring onions, cherry tomatoes and onions. In just 20 minutes, 2 servings of a healthy and hearty meal are created. Ideal for light cuisine, after a workout or as a vegetarian family meal.

Ingredients (9 ingredients)

  • 1 Stück red bell pepper
  • 2 Stück Spring onions
  • 125 g Cherry tomatoes
  • 0.5 Stück Onion
  • 1 EL Oil
  • 4 Stück Eggs
  • 4 EL Milk
  • 1 Prise Salt
  • 1 Prise Pepper

Preparation (7 steps)

Prepare vegetables

Clean the bell pepper, halve, remove the core and cut into small pieces. Clean the spring onions and cut into fine rings. Wash and halve the cherry tomatoes.

Chop onions

Peel and quarter the onion and put it in the mixing bowl. Chop for 3 sec./level 5.

Sauté onions

Add oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and simmer vegetables

5 min/212°F/Linkslauf Speed 1 212°F Reverse

Add bell pepper, spring onions and cherry tomatoes to the mixing bowl and simmer for 5 min./100°C/reverse direction level 1. Push down with the spatula.

Whisk eggs

Whisk eggs, milk, salt and pepper in a bowl.

Add eggs and let it set

Add the whisked eggs to the vegetables in the mixing bowl and let it set for 5 min./90°C/reverse direction level 1 without a measuring cup. Push down with the spatula.

Arrange the scrambled eggs with vegetables on plates and serve.
