Description

These three grill dips are an absolute highlight for every barbecue party! The ajvar dip gets a special note from the feta and the onion. The olive herb curd cheese dip is wonderfully fresh and goes perfectly with bread or vegetables. And the blueberry feta dip? A surprisingly delicious combination of sweet and salty, which I particularly like to serve with grilled food. The preparation is super easy and quick, ideal if you need to be quick. All dips can be prepared well and stored in the refrigerator. A must for every barbecue evening!

Ingredients (11 ingredients)

  • 300 g Feta
  • 300 g Curd cheese 40%
  • 400 g Grainy cream cheese
  • 200 g Ajvar
  • 1 piece Small onion
  • 130 g Olive mix
  • 60 g Goat cream cheese
  • 200 g Herb curd cheese
  • 125 g Greek yogurt
  • 2 tbsp Maple syrup
  • 200 g Blueberries

Preparation (9 steps)

Prepare Ajvar-Dip

Thermomix® Setting
5 sec/Speed 4

Put 150 g feta into the mixing bowl and chop for 5 seconds/speed 4. Then add half of the curd cheese (150 g) and half of the grainy cream cheese (200 g). Add 200 g ajvar and stir for 10 seconds/speed 3. Transfer to a bowl and chill.

Chill ajvar dip

Chill the ajvar dip for about 1 hour so that it can infuse.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Put 1 small onion in the mixing bowl and chop for 3 seconds/speed 5. Scrape down the sides with the spatula.

Finalize Ajvar-Dip

Fold the chopped onion into the ajvar dip and serve.

Prepare olive herb curd cheese dip

Thermomix® Setting
5 sec/Speed 4

Put 130 g olive mix into the mixing bowl and chop for 5 seconds/speed 4. Scrape down the sides with the spatula.

Mix olive herb curd cheese dip

Thermomix® Setting
10 sec/Speed 3

Add 60 g goat cream cheese, 200 g herb curd cheese and the remaining half of the curd cheese (150 g) to the olives in the mixing bowl and stir for 10 seconds/speed 3. Transfer to a bowl and serve cold.

Prepare blueberry feta dip

Thermomix® Setting
5 sec/Speed 4

Put the remaining feta (150 g) into the mixing bowl and chop for 5 seconds/speed 4. Scrape down the sides with the spatula.

Mix blueberry feta dip

Thermomix® Setting
10 sec/Speed 3

Add the Greek yogurt (125 g), the remaining grainy cream cheese (200 g) and 2 tbsp maple syrup to the feta in the mixing bowl and stir for 10 seconds/speed 3.

Fold in blueberries

Gently fold 200 g blueberries into the dip. Sprinkle the dip with some lime zest and serve cold.

Barbecuing without dips? Unthinkable for me! These three variants have become an integral part of our barbecue evenings over the years. It all started with the ajvar dip, which I learned about from a friend from the Balkans. The other two then emerged from a spirit of experimentation because I am always looking for new flavor combinations. The ajvar dip lives on the fruity spiciness of the ajvar, a pepper paste that is available in various degrees of spiciness. Your personal taste decides here! The feta provides a creamy texture and a salty note that harmonizes perfectly with the ajvar. The onion brings a light spiciness and freshness into play. Make sure to use a mild variety so that it is not too dominant. With the olive herb curd cheese dip, the quality of the olives is crucial. I like to use a mix of different varieties, from Kalamata to green olives with herbs. The goat cream cheese gives the dip a special spice and a slightly sour note. The herb curd cheese provides the creamy base and the fresh herb aromas. The blueberry feta dip is perhaps the most unusual variant, but that is precisely what makes it so exciting. The sweetness of the blueberries, combined with the salty feta and the slightly sour yogurt, is a real taste experience. The maple syrup enhances the sweetness of the blueberries and provides a caramel note. A hint of lime zest rounds off the whole thing. With the Thermomix®, it is important not to mix the ingredients for too long so that the dips do not become too fine. A slightly chunky consistency is desired here. For the ajvar dip and olive dip, first chop the onion or olives and then add the remaining ingredients. This ensures that they are evenly distributed. For a vegetarian version of the ajvar dip, you can replace the feta with a vegan alternative. For the olive herb curd cheese dip, you can replace goat cream cheese and herb curd cheese with vegan alternatives. The blueberry feta dip is a little more difficult to veganize, but there is now also vegan almond-based feta. Serve the dips with fresh bread, baguette, vegetable sticks or crackers. The ajvar dip goes perfectly with grilled food, especially meat and sausages. The olive herb curd cheese dip is a great accompaniment to fish and seafood. The blueberry feta dip is a surprisingly delicious combination with grilled cheese or chicken. All dips can be prepared well and stored in the refrigerator. They can be kept for 2-3 days without any problems. However, the blueberry feta dip should not stand for too long, as the blueberries will otherwise draw juice and dilute the dip. It is best to prepare it shortly before serving.
