Description

These small glasses with prawns, clementines and guacamole are a fresh and colorful starter, perfect for a cocktail party or a festive brunch. I love preparing this recipe because it is quick to make and always very popular. The sweetness of the clementines blends perfectly with the creaminess of the avocado and the iodized taste of the prawns. A little fresh coriander adds an extra touch of freshness. Feel free to prepare the guacamole in advance to save time. It is an ideal recipe for sunny days, easy to transport and enjoy on any occasion. A real treat for the taste buds!

Ingredients (9 ingredients)

  • 16 piece Pink prawns
  • 1 container Guacamole
  • 2 piece Clementine(s)
  • 2 piece Avocado(s)
  • 1 piece Lemon(s)
  • 1 bunch Coriander
  • 6 c. à soupe Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (6 steps)

Preparation of the prawns

Thermomix® Setting
3 sec/Speed 4

Reserve 8 whole prawns for decoration. Place the remaining 8 prawns in the Thermomix bowl and chop coarsely for 3 Sec./Level 4. Transfer the chopped prawns to a bowl. Add pepper, salt, chopped coriander and 3 tbsp of olive oil. Mix gently.

Preparation of the guacamole

Pour the guacamole into a bowl. Add the juice of half a lemon and mix gently to prevent it from blackening.

Preparation of the avocado

Peel the avocados, remove the pits and cut the flesh into dice. Sprinkle with the juice of the remaining half lemon to prevent oxidation.

Preparation of the clementines

Peel the clementines and separate the segments. Cut each segment into two or three pieces.

Assembly of the small glasses

Divide the cut prawns into the bottom of the small glasses. Then add the guacamole, then the avocado and clementine pieces. Sprinkle with the remaining 3 tbsp of olive oil.

Decoration and cooling

Sprinkle with chopped fresh coriander and finish with a whole prawn on top of each small glass to decorate. Place in the refrigerator for at least 10 minutes before serving.
