Description

This walnut cake from the Thermomix® is a festive cake classic with walnuts, butter, sugar and eggs. Preparation in the Thermomix® makes baking easier. The cake is ideal as a dessert or with coffee. Preparation time approx. 120 minutes for 12 servings. Suitable for lovers of nut cakes.

Ingredients (12 ingredients)

  • 180 g Flour
  • 180 g Walnuts
  • 180 g Butter
  • 180 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Stück Lemon zest
  • 1 Pck. Baking powder
  • 4 Stück Eggs
  • 1 Pck. Vanilla pudding powder
  • 500 ml Milk
  • 50 g Powdered sugar
  • Hazelnut brittle

Preparation (12 steps)

Preheat oven

Preheat the oven to 180°C top/bottom heat.

Mix eggs, sugar, lemon zest and butter until fluffy

Separate the eggs. Add the yolks with vanilla sugar, lemon zest and butter to the mixing bowl and mix for 3 min/speed 4 until fluffy.

Mix flour, baking powder and walnuts and stir in

Mix flour with baking powder and walnuts. Add this mixture to the mixing bowl and stir in for 20 sec/speed 3/reverse. Beat the egg whites with the powdered sugar in a separate bowl with a hand mixer until stiff.

Fold in egg whites

Carefully fold the egg whites into the dough.

Bake dough

Pour the dough into a buttered and floured mold and bake in the preheated oven for about 40 minutes.

Prepare pudding

For the cream, add vanilla pudding powder, milk and powdered sugar to the mixing bowl and prepare a pudding for 7 min/100°C/speed 2.

Cool pudding

Pour the pudding into a bowl, cover with cling film (directly on the surface to prevent skin from forming) and let it cool completely.

Mix butter and powdered sugar until fluffy

Add the butter with the powdered sugar to the mixing bowl and mix for 2 min/speed 4 until fluffy.

Stir in pudding

Add the cooled pudding spoonful by spoonful to the butter-sugar mixture in the mixing bowl and stir for 30 sec/speed 3.

Stir in walnuts

10 sec/Speed 2 Reverse

Add the walnuts to the mixing bowl and stir in for 10 sec/speed 2/reverse.

Cut cake base and fill

Cut the cooled cake base 2x, spread the bases with cream and assemble.

Decorate cake

Spread the cream all around the cake and sprinkle the edge with hazelnut brittle.
