Description

This white bean stew with pumpkin and noodles, also known as 'Beans with Reins', is a traditional Chilean dish that comforts the soul. I have been preparing it since I can remember and it is always a success at home, especially on cold days. The combination of creamy beans, the sweetness of pumpkin and the texture of noodles make it simply delicious. It is an economical, nutritious and perfect dish to share with the family. It is also an excellent vegetarian option, rich in fiber and protein. Go ahead and try this recipe full of flavor and tradition!

Ingredients (10 ingredients)

  • 1 cup white beans
  • 1 piece onion
  • 1 cup pumpkin
  • 100 gramos noodles
  • 2 dientes garlic
  • 1 packet vegetable broth
  • 1 cucharadita paprika
  • 1 cucharadita cumin
  • 1 pinch salt
  • 1 pinch pepper

Preparation (7 steps)

Soaking and cooking the beans

Soak 1 cup of white beans in water for at least 12 hours, ideally a whole day. Drain the beans and wash them well. Place the beans in a large pot with 3 liters of water. Cook in the pot until they are soft. Once cooked, set aside.

Chopping the onion

Peel and cut 1 onion into quarters. Place the onion in the Thermomix glass and chop for 3 sec./Stufe 5.

Sautéing the onion

Add a little olive oil to the glass. Sauté the onion for 3 Min./120°C/Stufe 1.

Preparing the pumpkin

Peel and cut 1 cup of pumpkin into small pieces. Set aside.

Incorporating ingredients and cooking

Add the chopped pumpkin, cooked beans (with part of the cooking broth), 2 minced garlic cloves, 1 sachet of vegetable broth, 1 tsp of paprika, 1 tsp of cumin, salt and pepper to taste to the Thermomix glass. Mix well with the spatula. Cook for 60 Min./100°C/Stufe 1/Linkslauf.

Adding the noodles

Break 100 grams of noodles into smaller pieces. Add the noodles to the Thermomix glass. Cook for 10 Min./100°C/Stufe 1/Linkslauf.

Rest and serve

Once cooking is complete, let the stew rest inside the Thermomix for about 10 minutes before serving. Serve hot.

The white bean stew with pumpkin and noodles, affectionately called "Beans with Reins" in my family, is much more than a simple recipe. It is a piece of my childhood, a warm hug on a cold day and a constant reminder of my grandmother's kitchen. She, with her wrinkled hands and her eternal smile, taught me to love this simple but flavorful dish. Every time I prepare it, I feel like I have her by my side, guiding me with her advice and secrets. The white beans, the undisputed protagonists, provide a creaminess and a mild flavor that is perfectly complemented by the earthy sweetness of the pumpkin. The pumpkin, preferably the "sweet potato" or "squash" variety, breaks down during cooking, thickening the broth and providing a vibrant orange color. The noodles, usually thin noodles, add a pleasant texture and a touch of carbohydrate that makes it a complete and substantial dish. The sautéed onion and garlic is the aromatic base, the foundation on which all the flavor is built. Paprika and cumin, essential spices in Chilean cuisine, give it a warm and slightly spicy touch that enhances the flavor of the other ingredients. Regarding the preparation with Thermomix®, it is important to remember that soaking the beans is crucial to reduce cooking time and improve their digestibility. Do not skip this step. When sautéing the onion, make sure it does not burn, as this would make the stew bitter. If you see that it is browning too quickly, lower the temperature a little. During the main cooking, the reverse blade (Linkslauf) is essential to prevent the noodles from breaking too much and turning into a mass. If you prefer a more whole noodle texture, you can add them a little later, reducing the cooking time. This stew is incredibly versatile. For a vegetarian or vegan version, be sure to use a good quality vegetable broth and omit any ingredients of animal origin. You can experiment with different spices, such as oregano, colored pepper or even a touch of merkén for a more smoky flavor. Some people add a little smoked paprika to intensify the flavor. Traditionally, it is served hot, accompanied by a good piece of homemade bread to dip in the broth. You can also add a little fresh chopped cilantro on top to give it a touch of freshness. In my house, we sometimes accompany it with a Chilean salad (tomato, onion and cilantro) to contrast the warmth of the stew. If you have any stew left over, you can store it in an airtight container in the refrigerator for 2-3 days. You can also freeze it for later consumption. When reheating, you may need to add a little water if it has thickened too much. You can even prepare the beans in advance and freeze them cooked. This way, you will have a base ready to prepare the stew at any time.
