Ingredients (10 ingredients)

  • 50 g rolled oats
  • 170 g buttermilk
  • 15 g fresh yeast
  • 10 g beet syrup
  • 250 g spelt flour type 630
  • 50 g wholemeal spelt flour
  • 75 g plain yogurt
  • 1 EL sunflower seeds
  • 1.5 TL salt
  • 1 EL olive oil

Preparation (4 steps)

Grind the oats

Place 50g rolled oats in the mixing bowl and grind for 10 sec./speed 10. Transfer and set aside.

Heat buttermilk, yeast and syrup

Put 170g buttermilk, 15g fresh yeast and 10g beet syrup in the mixing bowl and heat for 3 min./37°C/speed 2.

Prepare the dough

Add the ground oats, 250g spelt flour type 630, 50g wholemeal spelt flour, 75g plain yogurt, 1 tbsp sunflower seeds, 1.5 tsp salt and 1 tbsp olive oil and knead for 3 min./dough setting.

Shape and bake the rolls

Cut the dough into 6 equal pieces, fold, shape into rounds and place in the lightly greased Ofenmeister, flour and, if necessary, score. Close with the lid and put it in the cold oven. Bake at 230°C top/bottom heat on the lowest rack for 35-40 min. Check after 35 min. and brown the last few minutes without the lid if necessary.
