Description

With the Thermomix®, shortbread cookies with jelly filling are child's play. This simple cookie recipe with butter, powdered sugar, egg and jelly is ideal for the Christmas season. In just 50 minutes, approx. 30 festive cookies are created. Perfect as finger food for breakfast, as a dessert or for the whole family.

Ingredients (8 ingredients)

  • 200 g Butter
  • 170 g Powdered sugar
  • 1 Prise(n) Salt
  • 1 Pck. Vanilla sugar
  • 1 Stück Egg
  • 300 g Wheat flour Type 405
  • 50 g Starch
  • 100 g red jelly

Preparation (8 steps)

Mix butter, sugar and salt until frothy

Add 200 g soft butter, 170 g powdered sugar, 1 pinch of salt and 1 packet of vanilla sugar to the mixing bowl and mix for 2 min./speed 3 until frothy. Scrape down the sides with the spatula.

Stir in egg

20 sec/keine/Speed 3

Add 1 egg (room temperature) and stir in for 20 sec./speed 3. Scrape down the sides with the spatula.

Add flour and starch and knead

Thermomix® Setting
2 min/keine/Kneading speed

Add 300 g wheat flour type 405 and 50 g starch and knead for 2 min./kneading stage to form a smooth dough.

Shape dough pieces

Remove the dough from the mixing bowl and use your hands to form a ball. Divide the dough into walnut-sized pieces, roll into balls and place on a baking sheet lined with baking paper. Preheat the oven to 180°C top/bottom heat.

Shape hollows

Press a hollow into the middle of each ball with the handle of a round wooden cooking spoon.

Heat jelly

Thermomix® Setting
2 min/122°F/Speed 1 50

Add 100 g red jelly to the mixing bowl and heat for 2 min./50°C/speed 1.

Distribute jelly

Use a teaspoon to spread the warmed jelly over the dough hollows.

Bake cookies

Bake the angel eyes in the preheated oven for approx. 12 minutes. Then let it cool completely on a cake rack.
