Description

This rustic tomato soup is a comforting and flavorful dish, perfect for cold days. The recipe, which I have adapted for the Thermomix®, is very simple and uses fresh, seasonal ingredients. Day-old bread gives it a thick, creamy texture, while mint and thyme (optional) add an aromatic touch. It is ideal as a starter or light main course, and can be personalized with a poached egg or a few drops of lemon. An economical and delicious recipe that you will surely love! Also, it is an excellent vegetarian option and can be easily adapted for people with gluten intolerance using gluten-free bread.

Ingredients (13 ingredients)

  • 500 gr tomatoes
  • 100 gr day-old country bread
  • 2 clove garlic
  • 0.5 piece onion
  • 1 piece green pepper
  • 1 l vegetable broth
  • 1 cucharadita sugar
  • 1 ramita mint
  • 1 ramitas thyme
  • Eggs
  • 1 gajo lemon
  • to taste Salt
  • to taste Olive oil

Preparation (6 steps)

Prepare the vegetables

Thermomix® Setting

Peel the onion and garlic cloves. Cut the onion in half and the green pepper into large pieces. Place the onion, garlic and green pepper in the Thermomix bowl and chop 3 sec./Stufe 5. With the spatula, lower the remains from the walls of the bowl.

Sauté the vegetables

Thermomix® Setting

Add olive oil to the bowl and sauté the vegetables 3 Min./120°C/Stufe 1.

Add the tomato and sugar

Thermomix® Setting
25 min/212°F/Speed 1 100

Add the chopped tomatoes and a teaspoon of sugar to the bowl. Program 25 Min./100°C/Stufe 1. With the spatula, stir occasionally to help the tomato break down.

Incorporate the bread and broth

Thermomix® Setting
15 min/212°F/Speed 1 100

Add the day-old bread in slices and the vegetable broth to the bowl. Program 15 Min./100°C/Stufe 1. Stir carefully with the spatula so that the bread soaks well.

Blend the soup

Thermomix® Setting
1 min/Speed 8

Add the sprig of mint and blend the soup 1 Min./Stufe 8. Adjust the speed according to the desired consistency.

Simmer and serve

If you want to add eggs, do it at this time. Let the soup simmer for a few more minutes. Serve hot with a wedge of lemon (optional) and a sprig of thyme (optional).
