Description

This Thermomix® recipe for cinnamon stars is a Christmas classic. The main ingredients are almonds, egg whites, sugar and cinnamon. Preparation takes a total of 180 minutes and yields about 40 pieces. Ideal as festive finger food, dessert or for baking during Advent. Suitable for anyone who loves traditional Christmas cookies.

Ingredients (9 ingredients)

  • 300 g unpeeled almonds
  • 4 Stück Egg white
  • 1 Prise Salt
  • 80 g Sugar
  • 160 g Icing sugar
  • 0.5 Stück grated zest of untreated Lemon
  • 3 TL Cinnamon powder
  • 1 Messerspitze Clove powder
  • Sugar and flour for rolling out

Preparation (10 steps)

Grind almonds

Place the almonds with the skin in the mixing bowl and grind to a fine flour for 15 sec./speed 10. Transfer.

Whisk egg whites

Thermomix® Setting

Insert the butterfly. Add egg white and salt to the mixing bowl and whisk until stiff for 4 min./speed 3.5. Transfer.

Mix ingredients

Sift the icing sugar and add to the egg whites together with the grated lemon zest. Put 6 tablespoons of the mixture in the fridge for the icing. Mix the ground almonds and spices (cinnamon powder, clove powder) into the remaining egg whites.

Prepare dough

Place the dough on the work surface sprinkled with sugar and a little flour and knead lightly. Clean the work surface with a dough scraper and sprinkle with sugar and flour again.

Roll out dough and cut out stars

Roll out the dough to a thickness of 1 cm and cut out stars. Dip the cookie cutter in flour every now and then.

Prepare cinnamon stars

Line 2 baking sheets with baking paper. Place the cinnamon stars on the baking sheets and let them dry for 30 minutes.

Prepare icing

Beat the remaining icing and, if the egg white has settled, add 1 more tablespoon of icing sugar.

Spread cinnamon stars

Spread the icing thickly on the cinnamon stars and let them dry for 15 minutes.

Bake cinnamon stars

Bake in a preheated oven at 120 °C (top and bottom heat) for 30 minutes. Let cool on a wire rack.

Store cinnamon stars

Store between parchment paper in tin cans. To be soft and aromatic, the cinnamon stars should rest for at least 1 week.
