Description

This recipe for pasta in creamy shrimp sauce is an absolute classic that is quick to prepare and always well received. The combination of juicy shrimp, aromatic garlic and a creamy sauce is simply irresistible. I like to make this dish when I need something quick, but still want something special on the table. Perfect for a cozy evening for two or as a quick lunch. The fresh tarragon note rounds off the dish wonderfully. A real treat!

Ingredients (11 ingredients)

  • 200 g Spaghetti Linguini, Ravioli, Tortellini or similar
  • 2 tsp Olive oil
  • 250 g Shrimp(s) fresh, peeled, deveined
  • 4 Zehe/n Garlic finely chopped
  • 3 piece Shallot(s) diced, or 1/2 onion
  • 100 ml White wine or vermouth
  • 100 ml Cream
  • 1 tsp Tomato paste
  • Tarragon fresh
  • Salt
  • Pepper

Preparation (9 steps)

Chop shallots and garlic

Thermomix® Setting

Add 3 shallots and 4 cloves of garlic to the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté shallots and garlic

Add 2 tsp of olive oil and sauté for 3 min./120°C/speed 1. If desired, add the shrimp shells.

Fry shrimp and tarragon

3 min/248°F/Speed 1 120 Reverse

Add 250 g shrimp and fresh tarragon as needed and sauté for 3 min./120°C/speed 1 reverse.

Deglaze with wine and reduce

Thermomix® Setting
2 min/212°F/Speed 1 100

Add 100 ml white wine or vermouth and reduce for 2 min./100°C/speed 1 without a measuring cup.

Add cream and tomato paste

Thermomix® Setting
3 min/194°F/Speed 1 90 Reverse

Add 100 ml cream and 1 tsp tomato paste and heat for 3 min./90°C/speed 1 reverse.

Season the sauce and let it thicken

Thermomix® Setting
2 min/194°F/Speed 1 90 Reverse

Season with salt and pepper as needed and let it thicken for another 2 min./90°C/speed 1 reverse.

Remove shrimp shells

If shrimp shells were used, remove them from the sauce now.

Cook pasta

At the same time, cook 200 g spaghetti, linguini, ravioli, tortellini or similar according to the package instructions in a separate pot.

Arrange

Arrange the cooked pasta with the sauce and garnish with fresh tarragon.
