Description

This apple pie with almond topping is a poem! I especially like to bake it in autumn when the apples are fresh from the tree. The combination of juicy apples, crunchy almonds and a hint of lemon is simply unbeatable. The dough is quickly prepared in the Thermomix® and the cake smells wonderful while baking. Served with a dollop of Greek yogurt, it's the perfect dessert or a delicious accompaniment to afternoon coffee. An absolute must for all apple pie lovers!

Ingredients (11 ingredients)

  • 320 g Wheat flour Type 405
  • 180 g Sugar
  • 1 piece Egg (room temperature)
  • 250 g Salt
  • 1 kg Apples (e.g. Boskoop)
  • 0.5 piece Lemon
  • 1 tsp Fat for the mold
  • 150 g Flaked almonds
  • 150 g Butter (cold)
  • to taste Cinnamon
  • 100 g Butter

Preparation (6 steps)

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 300 g flour, 80 g sugar, 1 egg and 1 pinch of salt to the mixing bowl and stir for 20 sec./speed 4. Add 150 g cold butter in pieces and knead for 2 min./kneading level to a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.

Prepare apples

Preheat the oven to 180 °C top/bottom heat. Peel, quarter, core and dice 1 kg of apples. Squeeze half a lemon and pour the juice over the apple cubes.

Roll out the dough and fill the mold

Roll out the dough a little larger than the springform pan (21 cm) thinly. Grease the springform pan with 1 tsp of fat. Place the dough in the greased pan and pull up an edge. Spread the apple cubes evenly on the dough.

Prepare almond topping

Thermomix® Setting
3 min/122°F/Speed 2 50

Add 100 g butter and 100 g sugar to the mixing bowl and melt for 3 min./50°C/speed 2.

Complete almond topping

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add the remaining 20 g flour, cinnamon and 150 g flaked almonds and stir in for 10 sec./reverse rotation speed 2. Help with the spatula.

Bake cake

Spread the almond topping evenly over the apple pieces and bake the cake in the preheated oven for about 50 minutes.
