Description

These crispy, fried pastry sticks are a real treat! I especially like to make them for birthdays or just for Sunday brunch. The preparation is a bit more complex, but it's worth it! The dough is prepared in the Thermomix® and then fried in hot oil until golden brown. Together with the warm chocolate sauce and a pinch of cinnamon sugar, they are simply irresistible. A tip: They taste best when they are still warm!

Ingredients (9 ingredients)

  • 140 g Butter
  • 2 pinch Salt
  • 400 g Wheat flour Type 405
  • 8 piece Eggs
  • 75 ml Milk
  • 100 ml Whipping cream
  • 150 g Bittersweet chocolate
  • 1 tsp Cinnamon
  • 1 tbsp Sugar

Preparation (8 steps)

Prepare dough

Thermomix® Setting
5 min/212°F/Speed 1 100

Put 140 g butter, 2 pinches of salt and 500 ml water into the mixing bowl and bring to the boil for 5 min./100°C/speed 1.

Stir in flour

Thermomix® Setting
30 sec/Speed 4

Add 400 g wheat flour type 405 to the mixing bowl and stir in for 30 sec./speed 4. Transfer the dough to a bowl and let it cool slightly.

Incorporate eggs

Add 8 eggs one after the other to the dough in the bowl and stir in thoroughly with a hand mixer or whisk until a smooth dough is formed. Fill the dough into a piping bag with a star nozzle.

Prepare chocolate sauce

Thermomix® Setting
3 min/194°F/Speed 2 90

Put 75 ml milk and 100 ml whipping cream into the mixing bowl and heat for 3 min./90°C/speed 2.

Melt chocolate

Thermomix® Setting
20 sec/Speed 3

Add 150 g bittersweet chocolate in pieces and stir for 20 sec./speed 3 until the chocolate has melted and a creamy sauce has formed. Keep the chocolate sauce warm.

Mix cinnamon sugar

Mix 1 teaspoon cinnamon and 1 tablespoon sugar in a small bowl.

Fry churros

Heat oil in a pot or deep fryer. Squirt dough strands from the piping bag directly into the hot oil and fry until golden brown. Drain the fried churros on kitchen paper.

Toss and serve churros

Toss the hot churros in the cinnamon sugar mixture and serve with the warm chocolate sauce.
