Description

This mango yogurt drink is an absolute hit for hot days! I love making it when I need something quick and still want something delicious and refreshing. The sweetness of the mango harmonizes perfectly with the creamy yogurt and the exotic cardamom. The chopped pistachios add a nice crunch. A great drink for a quick breakfast, as a small snack in between or as a light dessert. If you like it vegan, you can simply use soy-based yogurt. Try it out, it's worth it!

About this recipe

This mango yogurt drink, or Mango Lassi as it is called in India, is more than just a quick recipe for me. I tried it for the first time during a vacation in South India, on a hot afternoon in a small street restaurant. The combination of the sweetness of the mango and the refreshing acidity of the yogurt was simply perfect and immediately thrilled me. Since then, the Mango Lassi has become an integral part of my summer. The main ingredient, the mango, should definitely be ripe. A ripe mango can be recognized by its scent, which should be intense and fruity, and by the fact that it yields slightly to pressure. The sweetness of the mango is crucial for the taste of the drink. I prefer Alphonso mangoes when I can get them, as they are particularly aromatic. But other varieties such as Tommy Atkins or Kent also work well. The yogurt provides the creaminess and a pleasant acidity. I prefer to use Greek yogurt with 3.5% fat, as it is particularly creamy. But you can also use natural yogurt with less fat, then the drink will be a little lighter. The ice cubes are of course important for the refreshment. The cardamom gives the drink an exotic note. A pinch is enough, as cardamom is very intense. The chopped pistachios provide a nice crunch and a slightly nutty taste. When preparing in the Thermomix®, it is important to cut the mango into not too large pieces so that it can be crushed well. The mixing time of 20 seconds on speed 8 is a good guideline, but you should check the drink in between and mix it a little longer if necessary until it has the desired consistency. If the Lassi is too thick, you can simply add some water or milk. For a vegan version, you can easily use yogurt based on soy, almond or cashew. Here, too, you should make sure that the yogurt is creamy. Instead of cardamom, you can also use other spices such as cinnamon, ginger or turmeric. A splash of lime juice or a few mint leaves also go well with it. The Mango Lassi can be enjoyed pure or garnished with a few fresh mango pieces. It goes perfectly with Indian dishes, but also with grilled food or simply as a refreshing snack in between. You can also use it as a base for a light dessert by thickening it with chia seeds or tapioca pearls. The Mango Lassi tastes best freshly prepared. But you can also store it in the refrigerator, but it should then be consumed within 24 hours. The pistachios should only be sprinkled on top shortly before serving so that they do not become soft. For a longer preparation, you can freeze the mango cubes and then add them frozen to the Thermomix®. This makes the drink even more refreshing.
