Description

Russian curd cheese buns.

Ingredients (14 ingredients)

  • 250 g Milk
  • 20 g Yeast
  • 30 g Sugar
  • 50 g Butter
  • 1 Stück Egg
  • 500 g Flour
  • 1 Prise Salt
  • 1 Pck. Vanilla sugar
  • 600 g Granular Cream Cheese
  • 1 Stück Egg
  • 100 g Sugar
  • 2 Pck. Vanilla sugar
  • 1 Stück Egg yolk
  • 1 EL Milk

Preparation (11 steps)

Prepare cream cheese

Put granular cream cheese in a sieve and place in the refrigerator overnight so that the excess liquid can drain off.

Prepare dough

Add milk, yeast, sugar and butter to the mixing bowl and 2.5 min./37°C/speed 2.

Knead dough

Add egg, flour, salt and vanilla sugar and 3 min./kneading stage.

Let dough rise

Put the dough in a lightly oiled bowl and let it rise covered for about 1 hour.

Clean mixing bowl

Rinse and dry the mixing bowl.

Shape dough

Place the dough on a lightly oiled work surface, form into a long sausage and divide into approx. 15 equal-sized pieces. Shape these into balls, place on a baking sheet and let rest covered for about 20 minutes.

Prepare filling

Thermomix® Setting

Put granular cream cheese, egg, sugar and vanilla sugar in the mixing bowl and 20 sec./speed 3.

Form hollows

Use the bottom of a drinking glass to press a hollow in the middle of each ball and press firmly with your fingers (dip the bottom of the drinking glass in flour beforehand).

Fill and let rest

Fill the hollows with the filling and let rest covered for another 15 minutes.

Preheat oven

Preheat oven to 200°C top/bottom heat.

Baking

Whisk egg yolk and milk, brush the dough and bake for about 20 minutes.
