Description

A sweet bun dessert filled with banana and caramel, topped with whipped cream and banana chips.

Ingredients (16 ingredients)

  • 600 g Wheat flour (Type 405)
  • 7 g Dry yeast
  • 50 g Sugar
  • 1 Päckchen Bourbon vanilla sugar
  • 125 g Butter
  • 250 ml Milk
  • 1 Prise Salt
  • 2 Stück Eggs
  • 4 Stück Medium-sized bananas
  • 4 EL Brown rum
  • 2 Prisen Ground cinnamon
  • 1 Prise Salt
  • 2 EL Sugar
  • 400 g Liquid sweet cream
  • 50 g Banana chips
  • 1 EL Powdered sugar

Preparation (11 steps)

Prepare flour mixture

Thermomix® Setting

Add 600 g wheat flour (Type 405), 7 g dry yeast, 50 g sugar and 1 packet bourbon vanilla sugar to the mixing bowl and mix for 10 sec./speed 4.

Melt butter

Melt 125 g butter in a small saucepan and remove from the stove.

Prepare milk mixture

Add 250 ml milk and 1 pinch of salt to the melted butter and stir.

Prepare dough

Add the flour mixture, the butter-milk mixture and 2 eggs to the mixing bowl and knead for 2 min./kneading setting to form an elastic dough.

Let dough rise

Let the dough rise in a warm place for 1 hour.

Prepare banana filling

Meanwhile, peel 4 medium-sized bananas and cut into small pieces. Add to a small saucepan together with 4 tbsp brown rum, 2 pinches ground cinnamon and 1 pinch salt and cook for 5 min./50°C/speed 1. Stir occasionally.

Preheat oven and prepare baking dish

Preheat the oven to 180 °C (convection oven). Grease the baking dish (25 x 20 cm) with butter.

Shape and fill Buchteln

Divide the Buchteln dough into twelve equal portions. Shape the dough into a palm-sized patty and place some banana filling in the middle. Fold the dough around the filling and seal. The filling should be completely enclosed by dough.

Bake Buchteln

Place the Buchteln next to each other with the sealed opening facing down in the baking dish and bake for 20 minutes on the middle rack in the oven until golden brown.

Prepare caramel sauce

Meanwhile, prepare the caramel sauce for the topping. To do this, add 2 tbsp sugar to a pan and caramelize. Add 100 g liquid sweet cream and simmer everything for 5 minutes. Stir again and again. Let the sauce cool.

Arrange

Roughly chop the 50 g banana chips. Shortly before serving, whip the remaining cold 300 g liquid sweet cream until stiff, dust the Buchteln with 1-2 tbsp powdered sugar and arrange on plates. Drizzle with caramel sauce, sprinkle with banana chips and serve with the cream.
