Description

This Caribbean sweet potato coconut soup is a vegetarian and vegan dish that is ideal as a main course. Preparation takes about 40 minutes. The soup is rich in flavor and refined with coconut milk. It is easy to prepare and perfect for an autumn/fall day.

  • Diced tomatoes
  • Vegetable broth
  • Spice mix
  • Salt*
  • 150 g Water*
  • Coconut milk
  • Parsley leaves
  • Onion
  • Garlic
  • Sweet potato
  • 10 g Oil*
  • Black beans
  • Sweet pointed pepper
  • Tomatoes

Preparation (11 steps)

Chop the parsley

Thermomix® Setting

Place remaining parsley leaves in the mixing bowl and chop for 3 sec/speed 8. Transfer to a small bowl.

Prepare onion and garlic

Peel the onion and garlic and halve the onion.

Prepare sweet potato

Peel the sweet potato and cut into approximately 2 cm pieces.

Chop onion and garlic

Place the onion and garlic in the mixing bowl and chop for 5 sec/speed 5. Scrape down the sides with the spatula.

Sauté the sweet potato

Thermomix® Setting
5 min/120 °C/Speed 1 248°F

Add sweet potato cubes and 10 g [15 g | 20 g] oil*. Sauté everything together for 5 min/120 °C//speed 1.

Cook the soup

13 min/Varoma/Speed 1 Varoma

Add diced tomatoes, vegetable broth, spice mix, salt*, 150 g [210 g | 250 g] water* to the mixing bowl, attach the Varoma and cook for 13 min [14 min. 15Min.]/Varoma//speed 1.

Keep Varoma warm

Remove the Varoma and keep warm.

Refine the soup

Thermomix® Setting
2 min/98 °C/Speed 1 208°F

Add coconut milk to the mixing bowl and heat again for 2 min. [3 min. 4 min.]/98 °C//speed 1.

Prepare black beans

Place black beans in the Varoma container and rinse with cold water.

Prepare sweet pointed pepper

Halve the sweet pointed peppers, remove the seeds, cut into approximately 1.5 cm pieces and add to the Varoma container. Make sure that enough steam slots remain free. Close the Varoma.

Prepare tomatoes

Halve the tomatoes, remove the stem and cut the tomato halves into approximately 2 cm cubes.
