Description

This ribbon noodle casserole is a quick and uncomplicated dish for everyday life. I often make it when things need to be quick and everyone needs to be full. The combination of ribbon noodles, a spicy tomato sauce and melted cheese is simply irresistible. Thanks to the preparation in the Thermomix®, it is ready in no time. If you like, you can add some vegetables such as peppers or zucchini. A great dish for the whole family that is guaranteed to taste good!

  • 300 g Ribbon noodles
  • 1 piece Onion(s)
  • 300 g Garlic
  • 5 tbsp Tomato paste
  • 200 ml Salt and pepper
  • 100 g Cheese

Chop onion and garlic

About this recipe

This ribbon noodle casserole is a dish that has had a permanent place in my kitchen for years. It is not a recipe from a cookbook, but rather a development over time, adapted to the taste of my family and the circumstances of everyday life. Originally it was a simple tomato sauce with noodles, but over time more and more ingredients and tricks were added until it finally became this casserole. The base of this casserole is of course the ribbon noodles. I prefer wide ribbon noodles because they absorb the sauce particularly well and create a nice texture in the casserole. The onion and garlic form the aromatic foundation of the sauce. The onion provides a slight sweetness and depth, while the garlic adds a pleasant spiciness and seasoning. The tomato paste is an important flavor enhancer and gives the sauce an intense tomato note. Salt and pepper are of course essential to balance the flavors and round off the taste. The cheese, in my case usually grated Gouda or Emmentaler, ensures a creamy consistency and a golden brown crust. The preparation in the Thermomix® is very simple and saves time. Chopping the onion and garlic is quick and even. Sautéing in the Thermomix® ensures that the aromas are optimally released. When cooking the noodles, it is important to activate the reverse rotation so that the noodles are not chopped. The cooking time may vary depending on the type of pasta, so you should taste the pasta towards the end of the cooking time. Melting the cheese in the Thermomix® is a convenient way to finish the casserole. There are countless ways to vary this casserole. For a vegetarian version, you can add vegetables such as peppers, zucchini, mushrooms or eggplant. These can simply be sautéed together with the onion and garlic. For a vegan version, you can replace the cheese with a vegan cheese alternative or simply leave it out. There are no limits to your imagination when it comes to spices. Oregano, basil, thyme or rosemary go perfectly with this dish. If you like it a little spicier, you can add a pinch of chili flakes. The ribbon noodle casserole tastes best when it is fresh from the oven. But it can also be prepared well in advance and reheated later. A fresh salad or a piece of bread goes well as a side dish. Leftovers can be easily stored in the refrigerator and reheated the next day. It is also ideal as a lunch for work or school.
