Description

This dish of chickpeas with spinach is a traditional Andalusian recipe that comforts the soul, especially on cold days. I have been preparing it for years and it is always a success at home. The cooked chickpeas are combined with fresh spinach and an aromatic sauté of garlic, bread and spices, creating a tasty and nutritious stew. It is an ideal vegetarian option for a complete and balanced meal. In addition, it is very economical and easy to prepare, perfect for any day of the week. It can be served hot and enjoyed for its comforting flavor. A simple recipe but full of flavor!

Ingredients (13 ingredients)

  • 500 g Cooked chickpeas
  • 400 g Frozen spinach
  • 2 clove Garlic
  • 1 slice Loaf bread
  • 5 g Ground cumin
  • 5 g Ground coriander
  • 5 g Sweet paprika
  • 1 pinch Ground white pepper
  • 60 g Tomato sauce
  • 30 g Apple vinegar
  • 100 ml Water
  • 100 g Extra virgin olive oil
  • 1 pinch Salt

Preparation (5 steps)

Steamed spinach

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Place the frozen spinach in the Varoma container. Pour 500 ml of water into the Thermomix bowl. Place the Varoma in its position and program 15 Min./Varoma/Stufe 1. Once the time is finished, remove the spinach, drain it well and chop it with a sharp knife.

Golden garlic

Thermomix® Setting
5 min/248°F/Speed 1 120

Peel the garlic cloves. Pour 100 g of extra virgin olive oil into the Thermomix bowl. Add the garlic cloves and program 5 Min./120°C/Stufe 1. Remove the golden garlic and reserve.

Fried bread and mash

Thermomix® Setting
30 sec/Speed 7

In the same oil in the bowl, add the slice of bread and program 3 Min./120°C/Stufe 1, until it is golden. Remove the fried bread and drain. Place the golden garlic, the fried bread, the ground cumin, the ground coriander, the sweet paprika, the ground white pepper, the tomato sauce, the salt, the apple vinegar and half of the oil (50 g) in the Thermomix bowl. Crush 30 Sek./Stufe 7.

Spinach sauté

2 min/248°F/Speed 1 120

Pour the remaining oil (50 g) into the Thermomix bowl. Add the chopped spinach and program 2 Min./120°C/Stufe 1.

Final mix

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the reserved mash to the Thermomix bowl and program 2 Min./120°C/Stufe 1. Finally, add the cooked chickpeas and program 5 Min./100°C/Linkslauf Stufe 1. Taste for salt and rectify if necessary before serving.
