Description

I love preparing these chicken morsels with Marsala and leeks! It is a recipe that reminds me of the flavors of traditional Italian cuisine, but with a touch of originality. The chicken morsels, tender and succulent, go perfectly with the sweetness of the leeks and the intense aroma of Marsala. The preparation is a little longer than usual, but the end result is truly rewarding. Perfect for a special dinner or a Sunday lunch with the family. A rich and flavorful dish that will conquer all palates!

Ingredients (9 ingredients)

  • Chicken liver
  • Leeks
  • Marsala
  • Chicken broth
  • 1 piece Shallot
  • 40 g Butter
  • to taste Extra virgin olive oil (EVO)
  • to taste Salt
  • to taste Black pepper

Preparation (9 steps)

Preparation of the livers

Clean the chicken livers and cut them transversely into slices about one centimeter thick. Set aside.

Preparation of the leeks

Clean the leeks and slice them finely. Put them in the Mixtopf with 20 g of butter and 2 tablespoons of extra virgin olive oil. Add a pinch of salt.

Cooking the leeks

Cook the leeks in the Mixtopf for 10 Min./100°C/Stufe 1. Add, little by little, a few tablespoons of chicken broth (about 50 ml), stirring with the spatula from time to time.

Preparation of the shallot

Finely chop a shallot in the Mixtopf: 3 Sec./Stufe 7.

Sauté the shallot

Add 20 g of butter to the chopped shallot in the Mixtopf and sauté for 3 Min./120°C/Stufe 1.

Sauté the livers

5 min/248°F/Speed 2 120

Add the chicken livers to the Mixtopf, salt, pepper and sauté evenly for 5 Min./120°C/Stufe 2. Sprinkle with a little Marsala (about 30 ml) and let it evaporate over high heat (without lid) for 1 Min./Varoma/Stufe 2.

Transfer and preparation of the cooking base

Drain the livers and transfer them, together with the leeks, to a serving dish. Put the Mixtopf back on the heat, add a few tablespoons of chicken broth (about 30 ml) to detach the cooking base and mix with the remaining butter (about 10 g) for 1 Min./100°C/Stufe 2.

Serve the preparation at the table, drizzling it with the cooking base.
