About this recipe

This chicken with dried fruits and mild spices is a dish that reminds me of Christmases from my childhood. My grandmother, of Algerian origin, often prepared it during the holidays. The smell of spices that filled the house, the sweetness of dried fruits... it was a real joy! I have adapted her recipe to the Thermomix® to save time and obtain a perfectly smooth sauce. Chicken drumsticks are the basis of this dish, their tender and juicy flesh wonderfully absorbs the flavors. Dried apricots and prunes bring a fruity sweetness and a soft texture that contrasts nicely with the chicken. It is important to macerate them in water so that they swell and release their aromas. The onion, finely chopped and then cooked, provides a sweet and slightly sweet aromatic base. Cinnamon and turmeric are the star spices of this dish. Cinnamon brings a comforting warmth and an enchanting fragrance, while turmeric colors the dish with a beautiful golden color and gives it slightly peppery notes. The flaked almonds, added at the end of cooking, bring a delicate crunch and a touch of indulgence. For preparation, the Thermomix® is a valuable ally. It allows you to chop the onion finely and sauté it without having to constantly monitor it. Feel free to adjust the amount of water during baking, depending on the desired consistency of the sauce. If you like spicier dishes, you can add a pinch of Espelette pepper or grated fresh ginger. For a vegetarian or vegan version, you can replace the chicken with pieces of butternut squash or firm tofu. In this case, reduce the baking time. You can also use other dried fruits, such as figs, raisins or dates. For the spices, feel free to experiment with ras el hanout, cumin or coriander. This chicken with dried fruits and mild spices goes perfectly with basmati rice, couscous semolina or creamy polenta. You can also serve it with a green salad for a balanced meal. This dish keeps very well in the refrigerator for 2-3 days. You can also prepare it in advance and gently reheat it in the oven or in a pan. It is even better reheated, because the flavors have time to develop.
