Description

I love this compote of red onions and cherry tomatoes! It's a perfect accompaniment to grilled meats or vegetarian dishes. The sweetness of the caramelized onions goes wonderfully with the acidity of the cherry tomatoes. I often prepare it in the summer, when the tomatoes are at their peak. It's so simple and quick to make with the Thermomix®! You can also serve it on toast as an aperitif. A real delight, and so easy to prepare!

Ingredients (7 ingredients)

  • 2 piece Red onion(s)
  • 15 l Cherry tomato(es)
  • 20 c. à soupe Olive oil
  • 1 piece Vegetable fat (margarine type) with 60% fat content
  • 20 cl Water
  • to taste Salt
  • to taste Pepper

Preparation (4 steps)

Preparation of the onions

Thermomix® Setting
3 sec/Speed 5

2 red onions cut into thin slices in the bowl. Program 3 Sec./Level 5 to chop them finely.

Sauté the onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 20 tbsp of olive oil and 1 vegetable fat (margarine type) with 60% fat content to the bowl. Program 3 Min./120°C/Level 1 to sauté the onions.

Adding the cherry tomatoes

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add 15 l of halved cherry tomatoes, salt and pepper to the bowl. Program 5 Min./100°C/Reverse Direction Level 1. Monitor the cooking.

Adding water and simmering

Thermomix® Setting
20 min/212°F/Linkslauf Speed 1 100 Reverse

Add 20 cl of water to the bowl. Program 20 Min./100°C/Reverse Direction Level 1. Stir from time to time with the spatula.
