Description

I love preparing these creamy tagliatelle with porcini mushrooms and pine nuts! It is a dish that immediately brings me back to autumn, when porcini mushrooms are at their best. The creaminess of the cream, the intense flavor of the mushrooms and the crunchiness of the pine nuts go perfectly together. Perfect for a Sunday lunch with family or a dinner with friends. They are prepared in a short time and the result is always a success! A true Italian comfort food, full of taste and tradition.

Ingredients (10 ingredients)

  • 400 g Fresh egg pasta
  • 300 g Porcini mushrooms
  • 30 g Pine nuts
  • 30 g Butter
  • 200 ml Cooking cream
  • 50 ml Brandy
  • 50 g Onion
  • 20 ml Extra virgin olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation (9 steps)

Cleaning and preparing the mushrooms

Thoroughly clean 300g of porcini mushrooms, removing any trace of soil. Slice the mushrooms, separating the stems from the caps.

Chop the onion

Insert 50g of onion into the bowl. Chop for 3 Sec./Stufe 5.

Sauté the onion

Add 30g of butter and 20ml of extra virgin olive oil to the bowl. Sauté for 3 Min./120°C/Stufe 1.

Cook the mushrooms

Add the sliced porcini mushroom stems to the bowl and cook for 5 Min./120°C/Stufe 1.

Add the mushroom caps

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the sliced porcini mushroom caps to the bowl and cook for another 3 Min./120°C/Stufe 1.

Deglaze with the brandy

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Deglaze with 50ml of brandy and cook for 2 Min./Varoma/Stufe 1, without the measuring cup, to evaporate the alcohol.

Add the cream and pine nuts

Add 200ml of cooking cream, 30g of pine nuts, a pinch of salt and a pinch of black pepper to the bowl. Cook for 2 Min./90°C/Stufe 1.

Cook the tagliatelle

In the meantime, cook 400g of fresh egg pasta in plenty of boiling salted water according to the instructions on the package. Drain the pasta al dente.

Season the tagliatelle

Pour the drained tagliatelle into the bowl with the sauce. Gently mix for 20 Sec./Linkslauf/Stufe 1 to mix everything well.
