Description

This creamy polenta with pork ribs in sauce is a dish that warms the heart, perfect for autumn evenings.   • 400 g corn flour
  • 2 l water
  • fine salt
  • 12 piece pork ribs
  • 1 piece chop
  • 700 g tomato purée
  • 1 piece carrots
  • 0.5 piece onions
  • vinegar
  • extra virgin olive oil
  • fine salt

Preparation (6 steps)

Polenta preparation

15 min/212°F/Speed 1 100

Pour 2 l of water into the jug and add fine salt to taste. Bring to a boil: 15 Min./100°C/Stufe 1.

Polenta cooking

30 min/194°F/Speed 2 90

When the water boils, gradually pour 400 g of corn flour into the jug, mixing with the spatula. Cook for 30 Min./90°C/Stufe 2.

Preparation of the sautéed base

Insert 1 carrot, cut into pieces, and ½ onion into the jug. Chop for 5 Sek./Stufe 5. Add extra virgin olive oil to taste and sauté for 3 Min./120°C/Stufe 1.

Adding the meat

Cut 12 pork ribs and 1 chop into small pieces. Brown the meat in a pan with a drizzle of extra virgin olive oil until golden. Transfer the browned meat to the jug.

Sauce cooking

Thermomix® Setting
45 min/212°F/Speed 1 100 Reverse

Add 700 g of tomato purée, vinegar to taste and fine salt to taste in the jug. Cook for 45 Min./100°C/Stufe 1/Linkslauf.

Serving

Pour the polenta onto a wooden cutting board and season with the rib sauce. Serve hot.
