Description

These curd cheese balls are an absolute must for every carnival party! I make them every year and they are always eaten up in no time. The curd cheese makes them particularly juicy and the fine orange note gives them that certain something. The preparation is super easy and thanks to the Thermomix® it's done in no time. They taste best when they are still warm, when the sugar is slightly caramelized. A great recipe that is guaranteed to put you in a good mood!

Ingredients (10 ingredients)

  • 1 piece Organic orange
  • 140 g Low-fat curd cheese
  • 2 piece Eggs
  • 60 g Sugar
  • 1 Prise(n) Salt
  • 200 g Wheat flour Type 405
  • 0.5 Pck. Baking powder
  • 80 ml Milk
  • 1 Pck. Vanilla sugar
  • 1 l Oil for frying

Preparation (7 steps)

Grate orange peel

Wash the organic orange with hot water and grate the peel with a zester or a fine grater. Set the grated peel aside.

Prepare dough

Put low-fat curd cheese, eggs, 40 g sugar, a pinch of salt and half of the grated orange peel into the mixing bowl and stir for 2 min./level 3.

Add flour mixture

Mix wheat flour and baking powder, sift into the mixing bowl and stir for 1 min./level 4. Gradually pour the milk through the lid opening.

Prepare sugar mixture

Mix 20 g sugar with the remaining orange peel and vanilla sugar in a small bowl and set aside.

Heat oil

Heat oil in a pot or deep fryer to approx. 160 °C.

Fry donuts

Use a tablespoon to cut off dumplings from the dough and fry in portions in the hot oil from each side for about 3 minutes until golden brown.

Drain and sugar

Remove the finished donuts with a slotted spoon and drain on kitchen paper. Immediately toss the still hot donuts in the prepared sugar mixture.

For me, curd cheese balls are as much a part of carnival time as confetti and colorful costumes. My grandmother always made them, and the scent of fried dough and orange has something incredibly homely for me. Of course, she prepared them without a Thermomix®, but I think the Thermomix® makes the preparation really easy and quick, without sacrificing the traditional taste. The secret of these curd cheese balls lies in the curd cheese. It ensures incredible juiciness and prevents the balls from becoming dry. The low-fat curd cheese is ideal here, as it does not contain too much fat and still makes the balls nice and loose. The eggs bind the ingredients and give the dough structure. The sugar naturally provides the sweetness, but also for the slight caramelization during frying, which gives the balls that certain something. The pinch of salt is a must to balance the sweetness and intensify the taste. The wheat flour type 405 is an all-purpose flour that is well suited for this type of pastry. The baking powder ensures that the balls rise nicely and become airy. The milk makes the dough smoother and ensures the right consistency. And the orange? The grated peel gives the balls a wonderfully fresh and fruity note that is perfect for carnival. When preparing in the Thermomix®, it is important to add the ingredients in the correct order. First the wet ingredients, then the dry ones. This avoids lumps. When adding the milk, it is advisable to pour it slowly through the lid opening while the Thermomix® is running. This allows the milk to combine well with the other ingredients. The temperature of the oil is crucial for the success of the curd cheese balls. It should not be too hot, otherwise the balls will burn on the outside and still be raw on the inside. 160 °C is ideal. It is best to test the temperature with a wooden skewer. If bubbles form on it, the oil is hot enough. If you like it a little more unusual, you can refine the dough with other spices. Cinnamon, cardamom or nutmeg go perfectly with curd cheese balls. It is also possible to add raisins or almonds. For a vegan version, you can replace the curd cheese with a plant-based alternative and the eggs with apple sauce or flaxseed eggs. The curd cheese balls taste best when they are still warm, when the sugar is slightly caramelized. A glass of milk or a cup of coffee goes well with it. But you can also sprinkle them with powdered sugar or serve with a chocolate sauce. The curd cheese balls can be stored in an airtight container for about 2-3 days. But they taste best freshly prepared. You can also prepare the dough and store it in the refrigerator. But you should stir it briefly before frying.
