Description

  • 200 g Potato flour
  • 120 g Flour
  • 200 g Margarine

Mix dry ingredients

Put 80 g icing sugar, 2 packets of vanilla sugar, 200 g potato flour and 120 g flour into the mixing bowl and mix for 15 sec/speed 4.

Add margarine and knead

Add 200 g margarine in small flakes and knead for 2 min/kneading stage. If necessary, add some flour and knead again for 30 sec/kneading stage.

Shape dough pieces

Remove the dough from the mixing bowl and form slightly more than hazelnut-sized balls. Preheat oven to 175 °C (convection: 155 °C).

Bake cookies

Place the dough balls on baking trays lined with baking paper and flatten with a fork. Press the fork into some starch every now and then, then it will not stick to the dough. Bake in the preheated oven for 12-15 minutes. The cookies should remain light and not be browned.

Decorate

Let the baked cookies cool down a little and dust with some icing sugar as desired.

About this recipe

These delicate potato cookies are a little trip down memory lane for me. My grandma always baked them at Christmas time, and the scent that wafted through the house is one of my dearest childhood memories. She always called them "Snowflakes" because they were so light and delicate. The recipe has been passed down through generations, and I have now adapted it for the Thermomix® to make preparation even easier. The ingredients are deliberately kept simple, but each one plays an important role. The icing sugar provides the fine sweetness and delicate texture of the cookies. The vanilla sugar enhances the aroma and gives them a slightly Christmasy note. The potato flour is the secret to the special tenderness of the cookies. It ensures that they melt in your mouth. The flour gives the dough structure and hold. And the margarine, which I traditionally use, makes the cookies crumbly and juicy. When preparing in the Thermomix®, it is important to mix the dry ingredients really well before adding the margarine. This way they are evenly distributed and no lumps form. The margarine should be cold so that the dough does not get too warm. If the dough is still too sticky after kneading, simply add a little more flour. But be careful not to add too much, otherwise the cookies will become too dry. When shaping the cookies, it helps to lightly dust your hands with flour. This prevents the dough from sticking. And the trick with the fork and the starch is really worth its weight in gold! This is how you get the typical structure and the fork stays clean. If you like, you can of course also vary the cookies. For a vegan version, you can replace the margarine with a plant-based alternative. A little lemon zest or a hint of cinnamon in the dough gives the cookies a special touch. Chopped almonds or nuts also go well with them. The potato cookies taste best on their own, but they also go perfectly with a cup of coffee or tea. If you like it a little more festive, you can dust them with icing sugar or decorate them with icing. A dab of jam or a spoonful of cream also go well with them. The cookies can be stored well in a cookie tin. They will stay fresh and tender for several days. You can also prepare the dough well in advance and store it in the fridge. This way you always have fresh cookies ready when visitors announce themselves. And if you are in a hurry, you can also freeze the cookies. This way they will keep for several months and can be thawed quickly when you need them.
