Description

This chocolate curd dessert is a real treat and super easy to prepare with the Thermomix®! I especially like to make it when I need something quick and still want to put something delicious on the table. The combination of dark chocolate, creamy curd and fresh raspberries is simply unbeatable. The berry muesli provides an extra crunch. Perfect as a light dessert or sweet snack. And the best part: it's ready in no time!

Ingredients (6 ingredients)

  • 100 g Dark chocolate
  • 500 g Low-fat curd
  • 1 Pck. Vanilla sugar
  • 15 g Mint
  • 50 g Berry muesli
  • 12 piece Raspberries

Melt chocolate

Break 70 g of dark chocolate into pieces and put into the mixing bowl. Melt for 3 min./50°C/speed 2.

Prepare chocolate curd

Add melted chocolate and 250 g of low-fat curd to the mixing bowl and stir for 20 sec./speed 3.

Prepare vanilla curd

Add the remaining 250 g of low-fat curd and 1 packet of vanilla sugar to the mixing bowl and stir for 20 sec./speed 3.

Prepare mint

Pluck 15 g of mint leaves, wash and shake dry. Set aside.

Grate chocolate

Break 30 g of dark chocolate into pieces and put into the mixing bowl. Chop for 5 sec./speed 5.

Layer dessert

Divide the chocolate curd between 4 glasses. Add 50 g of berry muesli on top. Add vanilla curd on top. Sprinkle the grated chocolate on top. Garnish with mint and 12 raspberries.

This chocolate curd dessert has become a real classic in our home, especially when things need to be quick or when visitors announce themselves spontaneously. The idea came from the desire to create a dessert that is both light and satisfying and does not require hours of preparation. Curd has always been an integral part of our diet, and the combination with chocolate seemed just perfect. The dark chocolate is the heart of this dessert. It provides a pleasant bitter note that harmonizes wonderfully with the sweetness of the vanilla sugar and the acidity of the raspberries. I recommend using a high-quality chocolate with at least 70% cocoa content, as it has a more intense flavor. The low-fat curd forms the creamy base. It is light and contains a lot of protein, which makes this dessert a relatively healthy sweet. The vanilla sugar enhances the sweetness and gives the curd a fine vanilla note. The fresh mint provides a touch of freshness and rounds off the taste experience. The berry muesli brings a crispy contrast to the creamy texture and at the same time provides additional fiber. The raspberries are the icing on the cake. Their fruity acidity goes perfectly with the chocolate and curd. When preparing it in the Thermomix®, it is important not to melt the chocolate too hot, as it can burn otherwise. The 50°C are ideal. Make sure that the mixing bowl is clean and dry before adding the chocolate. When stirring the curd with the chocolate and vanilla sugar, it is important not to mix for too long, as the curd can become too liquid otherwise. 20 seconds on speed 3 is usually sufficient. If you don't have fresh mint on hand, you can also use dried mint, but the fresh version is of course more aromatic. The recipe is already suitable for a vegetarian version. For a vegan version, you can replace the low-fat curd with a plant-based alternative such as soy curd or cashew curd. Make sure that the chocolate used is vegan. Instead of vanilla sugar, you can also use agave syrup or maple syrup. If you like it a little spicier, you can add a pinch of cinnamon or cardamom to the vanilla curd. It is best to serve the dessert immediately after preparation so that the muesli remains crispy. It is ideal as the conclusion to a light lunch or dinner. You can also garnish it with other fresh fruits such as strawberries, blueberries or blackberries. A dollop of whipped cream or a spoonful of Greek yogurt also go well with it. The dessert can be prepared well in advance. You can prepare the chocolate curd and vanilla curd a few hours in advance and store them in the refrigerator. However, you should only add the remaining ingredients shortly before serving so that the muesli does not soften and the mint remains fresh. Stored in the refrigerator, the dessert will keep for about 1-2 days.
